Mike you really hit the right food spots. You are an afficinado on authentic chinese food but remember that there were a lot of Chinese in India for centuries and hence the Chinese food in India (Kolkata) will have Indian influence. This Indian chinese food is only found in Kolkata because of the chinese population (now dwindling). I was surprised you didn't find anyone that speaks Mandarin because people still do speak in Mandarin over there. The Chinese own leather tanneries in Kolkata and lots of shoe shops owned by them at bentick street.

We have Chinese food here in Shillong too and probably more authentic as we eat beef and pork than you guys.
@shngain1005 жыл бұрын
@Gargee Basak The only mainland Indians I know that consume pork are Goan Keralite and some southern Christian communities. Most muslims will eat beef anyway. I'm surprised to know that Bangla eat both. The Bangla community here in Shillong don't eat beef and rarely eat pork but loves fish and white meat.
@shngain1004 жыл бұрын
@Gargee Basak I respect people's choice of diet and I get it its mainly due to religion and culture. I don't know if it's still there, but when I lived in Ottawa there was a restaurant called Haveli. We adored it! We went to a lot of wonderful buffet brunches there. The staff would talk to you and find out what "heat" intensity you liked, and made sure you knew exactly what you were eating. We would eat ourselves into a food coma. Then Dad would have to get us all out to the car and drive us home, where we would collapse across our beds and moan. There would be NO mention of dinner on those days. What was really nice about the Sunday brunch days was seeing all the nationalities crammed into the restaurant. Haveli was so good, that the diplomatic community (Ottawa, Canada's capital!) would flock there with their families for brunch.

But funny thing about local Chinese food is that when you take some Chinese visitors to the local Chinese restaurant boosting about how we like Chinese food in our country and our Chinese guest were always confused and failed to understand that why we are calling this strange food as Chinese that they also fail to recognize.

1:57 that momo dough is thick because it becomes easier to fry and maintain consistency. I think! The steamed ones have much thinner dough. Momos are my favourite. I've tasted momos from many states and hmmm, they all are so good.

that hakka wonton noodle soup almost similar to Indonesian's chinese wonton noodle soup. Noodles mixed with seasoning and oil (I typically using fried onion's oil), topped with shrimp wontons (fried and/or steamed) and combined with a small bowl of clear soup (this is chicken broth, seasoned with small amount of oil, pepper and salty soy sauce)

sandeep kotnala the green chutney thing was perfect for those dishes. what are you on about?
@sandeepkotnala6 жыл бұрын
Albert Lin with drums of heaven aur with golden dragon prawns we serve and I have seen in most of hotels serve chili garlic sauce Fresh chili Ginger Garlic Tomato ketchup Coriander roots And soya sauce and touch of vinegar That's is the recipe of the dip what we follow But any how every resturant have there own standards
@alblin6 жыл бұрын
sandeep kotnala I've been there plenty and Im fairly certain that green sauce is exactly what you're describing. Spicy coriander sauce. Just more green and less red. Corriander leafs and not roots I believe.Ofc I dont know the exact recipe but that's similar to the one we make at home for those fried stuff. But yeah, the sauce from that is AMAZING haha.
@sandeepkotnala6 жыл бұрын
Albert Lin no worries I am going to shoot these recipe very soon

In Kolkata this place is also known as Tangra. Home town to indianized Chinese which we all love. People are actual descendants of China but as 3rd 4th generation in India so are more Indians than some traditional anti every-thing-india Indians when it comes to allegiance to country. Definitely must try place if you are in Kolkata or planning to visit ! However new generation from tangra are opting to go to other cities to pursue career in other areas good that they are integrating more in India but sad tangra would lose its charm as it's the People of china town which makes it special.

Mike..... I am a calcuttan..... lived in Keqiao Shaoxing for 4 years. Believe me...... you had as your guides non-bengalis who have very little idea of Calcutta - culturally and culinary. I want you to invite you to this city again and take u through the journey of a life time. The city is a child in terms of age compared to Delhi, Istanbul, Paris, London etc..... but legacy is huge. Furthermore the food actually represents the multicolonial influence. Saddened by your guides and experience. Do have a secondary program.... it would be my honour to take you through

13:26 reminds me of Indonesian's chinese noodles. It has soup separately in a small bowl with green onions. The noodles itself mixed with some seasoning such as sesame/onion's oil, salty soy sauce and peppers. And typically come together with two boiled dumplings. Noodles then topped with green onions and fried shallots.
