Is there any use for the waste product, given it will be contaminated with nails/pieces of plastic, etc?

Generally the plastic and metal are sorted out (using magnets for metal, for instance) and the shredded wood chips are used for whatever you use wood chips for.

They use eddy current and magnetic separators to get the metals out.

I've watched these impressive videos for years, but do wonder why these machines appear to be very slow. I want to think that they would quick like a paper shredder device...

the slower a machine is the more torque per power unit (watts) it has

no, these pallets were probably almost worthless (and rotten) and it definitely wasn't anything close to $500 worth of wood

They can process that and make OSB or particle board. Just got to take out the nails.
