A shoulder plane also has the side cutter for the end grain, doesn't it? 🤔

Some do but most don't. I shoulder plane is intended to cut the shoulder beside a tenon so it's cutting end grain rather than face grain.

Hi! I've learned so much from you, thank you! If I were to use this process for a door to a cabinet, how would I go about making the rabbets for the glass to sit into? I would not want to have full length rabbets and stopped rabbets are really tedious to make. Would love to hear your thoughts on this.

I would just do a full length rabbit. You can cut the joinery to fill the gap and hide it. Or you can always plug the end.
