Add a bit of my own thoughts as maybe fill the cracks and holes. As being a dining table food and crumbs will end up in them and not so easy to clean...

I had the same thought namely when you have kids. Also think about when doing arts & crafts on the table. Glitter etc will get in all those cracks & holes.

Aus Eisenbahn Balken würde ich keine möbel bauen... Die sind mit wirklich giftigen Stoffen behandelt, meist Petroleum. Nichts desto trotz schönes Stück

Firstly, this is a beautifully designed and crafted table. Secondly, after all that work why don't they FINISH THE JOB PROPERLY? Being a table, some food and liquid will constantly fall into the cracks and holes to smell and damage the table as it will be too difficult to clean it out. SO, before varnishing, fill in all the cracks, gaps and holes with wood filler and dowels, for goodness sake. This will also strengthen this rubbish wood, especially if they also brush on some wood strengthener that is easily available nowadays. I'm going to have to stop watching these videos as they are too frustrating!
