It depends on the length of your blade whether you'll get full reach of a 6 inch stone with the regular clamp. If you sharpen a small blade then you will use only part of a 6 inch stone, but it does not really matter. You can turn the stone 180 degrees every other time you sharpen to help it wear down evenly over time if needed. If your preference is a longer reach, then it's best to use the KakBritva central wide clamp conversion together with a 6 inch stone.

I have 6" diamond stones from the work sharp guided sharpening system upgrade kit, would those work with the 6" stone holder in the video?

Most 6 inch sized stones would work, so I assume the 6 inch diamond stones of your guided system upgrade kit would work. With the original Precision Adjust stones, Work Sharp has their stones mounted on a triangular shaped holder so there is no real need for a separate stone holder. The holders in the video are for the aftermarket stones used in most of the popular professional systems.
