It is enjoyable too watch this man make noodles . You can see he is passionate about making the best noodles possible .He makes his noodles with care . Most owners just throw all ingredients into a machine and mix it . This owner does it by hand .

As amazing as his work ethics is, I do hope he gets more sleep at night and take better care of his health. I 100% agree with one of the comments saying that there should be a stop on glorifying hard work at the expense of a person's well-being.

While I admire his skills and dedication, I do not applaud his work ethic beyond what is considered standard 8hrs per day. No amount of money or work ambition is worth it compared to family and personal time. It is called life.

I watched 2 different videos of old udon makers and they couldn't stand up straight. They stayed bent over! After seeing this guy and him being hunched over to make the udon i can see why the old ppl were in thats state... I hope he finds a better system that doesn't keep him hunched over

I believe the measurement of ingredients in the dishes and udon are done to ensure consistency in results and flavor. In that respect, the customers ever know what they're going to get/.
I respect the passion but realistically this dudes most likely getting less than 3 hours of sleep a night. That's a recipe for an early grave. It just is! I have no doubt his noodles are excellent but I'd rather see him live long life. Do what makes you happy though, I guess.

These working hours are health debilitating. They will take their toll in his latter years. But if that's what he wants to do that is what he wants to do. There is certainly nothing heroic or romantic about it.
The family are obviously maki g delicious food but hopefully they can experience more quality family time, averaging 3 or 4 hours sleep every day could be detrimental to his health , his family needs him more than his customers.
