This is absolutely hands down THE BEST mac and cheese I have ever had! We couldn't get enough!! I coupled it with brown sugar, bourbon barbeque glazed pork loin chops, roasted potatoes and salad. We're still in a food coma a week later!! So stinkin' good!

I love to cook! I love creating recipes! I love the subtle nuances of food and the way flavors can dance on my tongue! I know this may sound odd, but as Joe speaks about the dish, he is preparing, I can hear and see his love of it radiating out of his soul. It is such a turn on! I almost always saute onion in my mac and cheese. Gave some to a neighbor friend and they said they tried to id the peices of something soft in it, then said it was my onion. They apparently liked it cause they ate it all. She was dying of from several types of cancer and was a school friend for many years.i felt I needed to try giving her a little surprises by food .

This is a " fusion " recipe, but if you try, in Italy, to put garlic and onions in a " 4 formaggi ( 4 cheeses) " preparation your first hand could be chopped by The Chef in little pieces and served as brunch to guard dogs :) . The italian " 4 Formaggi " needs NO garlic ( garlic isn't anywhere in italian cooking, neither in bread !), NO onions, NO Pecorino Romano, NO Mozzarella, but a spoon of milk, a bit of butter and, following the right succession and waiting the complete melting of a cheese before add the next one, Gorgonzola, Taleggio, Fontina and Parmigiano Reggiano. Melt well, add rice or short pasta and have a taste of Paradise.

Hello Joe, I am from India. I love Italian food. I have tried few recipes from Italian cuisine. But when I tried Mac and cheese, it never gave me authentic taste. Actually in India I don't get Romano and Fontina. Once I tried Gruyere instead of Fontina. Taste reminded me raw gooseberry but not sour, and a bit crunchy. I believe this is truly Italian, another classic that my mom shines on her's is A LOT LIKE yours! The beginning bechamel/white sauce, for some reason I seem to get confused for the alfredo sauce when I haven't cooked for awhile, but this roux is good for sausage gravy too & that goes nice with that fried Chicken! C'mon Joe, I know you didn't say "Al Dante"now I gotta ask ya who's he? but if you told me you'd probably have to kill me right?lol! Whoever he is he's got teeth!...oh forget a bout it!

This looks great, Joe but I gotta say.....when I want comfort food it's Ma's Trailer Park Mac & Cheese made with sautéd onion, a roux, evaporated milk from a can, Velveeta, & a spoon of French's mustard. I'm sure everyone knows that's served with baked spam spiked with several whole cloves (the spice, not garlic) and a sauce of brown sugar, cider vinegar & a pat of butter. Oooooooh Weeeee! I've never seen it done this way. I always add my cheeses to the white sauce and just butter to the breadcrumbs but I will definitely try it Joe's way. My husband is so plain, he hates mustard, ketchup, mayonnaise, tomatoes, onions; he even eats his salad with no dressing, no ranch nothing just the lettuce. You name it, he hates it. Soooo... I secretly put the onion paste all up in this delicious mac and cheese and he ate it, had seconds and ate the leftovers until it was gone. He had no idea and said it was the best he's ever tasted. 👍

Well... no- not 'quattro formaggio', Joe- that would be translated as ' four cheese'. It's 'quattro formaggi', because it's 'four cheeses', so the ending is plural. Thanks for your cooking demos- I enjoy them very much! And 'al dente', not dante. Dante was the great Florentine poet from the Middle Ages.
