I always wonder why is the approval necessary. I mean what happens to the bottle if it's rejected?

ive had a bottle rejected , it was just a red wine, put the cork back on and refrigerate

The sparkling wine and champagne corn will not fit in bottle after opening … and also if guest taste and rejected we might loss a wine with that at last we will be shortage of 1 glass and the cost ❤

The wine can have a mistake, thats why you try the wine. You dont have to bring an other bottle if the costumer dont like it. It was his/her choice.

Good question, there are several options; here are just a few: (1) a rejected wine that is not tainted can be served by the glass to defray its cost and secure some profit, (2) in some rare cases, it can be recorked and returned to the distributer for a replacement, or (3) it can be consumed by qualified staff members at an appropriate time.

IMHO, yes, totally fine. As a woman with small handsI find it helps with gripping the cage and cork.

Never upside down the bottle, leave the bottle in the icebucket, when the sommelier come, u can ask for another or say him u are ok.

It is. Sometimes I do it because I ask the guest what he wants. but I always says leave it open. Champagne and other sparking wines are usualy aged for a minimum of 4 years so letting the champagne open wil let the wine breath a bit. Insects wil not come in if your restaurant is tidy how it used to be. And otherwise because the bottle contains Carbon Dioxide because pf the sparkle and it does not attract bugs because it is to aggresive of a gas

Place a towel/serviette over the top of the bottle whenever you place it in the ice bucket.

yes. All wines are offered to taste for faults and general approval.

I have a question, should you serve clockwise starting with a lady and then then whoever is next to them? Or serve all ladies clockwise, then do another trip around the table serving the men?

It’s traditional to serve ladies first. If you’re in a more traditional and conservative venue, they may follow this rule. If in a more modern and liberal establishment, they may eschew this, opting to serve clockwise regardless of gender. The latter is much more common where I live, in San Francisco. It depends on how the sommelier or wine director of the restaurant directs their staff to provide the wine service.

as a sommelier you should sniff the cork before pouring a sample for the guests (for checking for faults).

I presume you’re being facetious, but to answer the question earnestly, Ladies, then Gender X, then Men, then the Host (who is genderless in the eyes of the Sommelier)

@@aagg6124 I’m of the opinion that going by outward visual clues is enough to follow standard etiquette. It should be obvious to anyone that the service Staff aren’t trying to make assumptions, but can only go by what information they receive visually. If someone told me otherwise, I’d be happy to adapt my service style to suit.

Not too sure about keeping the cage on, when going to opening the cork, you need as much grip as you can when opening the bottle??

The Server should hold the cage/cork with service linen not a bare hand! safer, better grip, more elegant and can catch froth if it comes out
