Ugh! So jealous that you snagged one of those WSM hanging racks. For some dumb reason Weber discontinued them & they're no where to be found (except in Canada or on EBay for $140 😳). Did you do this cook PBC style (no water pan)? I so want to try hanging some ribs in the WSM that way. Everything looked good, Phil! 👍

Hey Jon, I couldn't find this assesory available on Amazon either, but after searching the web, I found it (Weber Original 22" Expandable Smoking Rack) at idealtruevalue.com online. Obviously when the cease fire went out, lots of smaller venues still had some in stock. Lucky I guess, and timing. lol Yes, I wanted the pit barrel swavavue on the chicken. I did not use the water pan. I hardly ever use it. I know it does help regulate temp, but I fly reckless. Thanks for the comments

Hey Phil. I've been watching many of your videos up here in cold Canada and I must say I'm quite enjoying them. I especially like your mods that you make to your Weber Smokey Mountain. Very inventive. I've been a Traeger user for over 10 years and decided I wanted to go back to charcoal for some of my smoking and grilling. I have a Down Under Ranger 18" which is made in Australia. A very good unit and comparable to the WSM with a main difference that the WSM has 1 middle section with 1 door whereas the DUR has 2 smaller middle sections with a door in each. It's the same height as the WSM but somewhat more flexible in terms of changing the heights of the smoker for various smoking and grilling applications. It also has the large water pan. Not all of the Weber accessories fit the DUR so I find I have to modify some of your mods and I can't get some of the Weber accessories up here. To order from the US is very expensive with the dollar exchange and shipping so I make many of the accessories with whatever I can lay my hands on. You have many good adaptations in your recipes and I've tried several of them with very good success. Keep up the good work and I'll keep up the watching.

I have two warming racks. They both came from Amazon. The Weber expansion rack is not offered by Weber any longer. However, Gateway Drums has a rack which will work. Check out Jon's video about this at RALEIGH SMOKE . Go look at my Ultimate mods video. I pinned a comment below it myself which shows all of my modifications which are some you can do with the WSM. Also go check out Joe's BBQ House channel, and THE WOODSHED SMOKE and BBQ. Both channels have done some cool mods to the WSM.

Hello Thomas thanks for following the PIF channel. Weber not longer sells the hanging rack. However, the hanging rack which comes with the Gateway Drum works perfectly on the wsm. They have large and small. Get the large if your wsm is a 22.5. The warming rack can be ordered from Amazon.

Hello Phil, I'm new to your channel, love the videos, one question I have, gonna buy a new smoker, which one do you recommend, the WSM, or the Barrel house smoker?
@progers5019
@progers5019 6 жыл бұрын
Hey Rod. Both are good smokers. I like the wsm the best. With a few inexpensive modifications, the wsm can be a grill and smoker. It accepts the Santa Maria grill accessory on the bottom section also. I would go with the wsm.

@@progers5019 hello Phil, thank you for your help, my question, if you had one grill, what would it be? Thank you.
@progers5019
@progers5019 6 жыл бұрын
@@rodagerter7813 Hey Rod, again, it depends on your needs and what you want to do whether its for just backyard use, or cooking large amounts of food for various reasons. For just backyard use me and mine, after knowing what I know now, it would be my modified wsm with all of the attachments and accessories inclu a bbq guru for the long cooks. The kettle is very good, very cheap, with many accessories would be a close 2nd. The reason I choose the wsm over the kettle is the cooking capacity and large dome lid which allows more stacking at the top. I do have an offset which is a nice cooker/smoker, but is very expensive and requres fire tending on every cook which is anywhere from 2 to 4 hours. Some guys love the offset involving sitting around the fire and having a good ole time (so do I), but that will not be on every cook. I don't own a pellet smoker but have watched many videos about them. It is the ultimate set it forget it smoker. Lot's of comp users use them. Again, depending on what you want and need for your situation. A pellet could be the best smoker to own due to no real tending it. They can range from $500-$2k. Flat Top Griddles e.g. Blackstone and Camp Chef are nice for what they are designed for. Barrel Smokers are great cookers for the money too. Excellent rib cookers. I like the BHC because you can lift the barrel off of the charcoal to refuel if needed. also no rods and a lid hinge. So for me personally, for the money, for the fun and ease of use, the best setup is a 22 inch kettle and wsm so the accessories can interchange. If you put the 3rd bracket in the 4 grate bracket standards, this simple mod allows the wsm smoker to be a grill too which accepts all the kettle accessories which opens up more possibilities. See my ultimate mods vid which explains. Thanks-Phil

Hey Phil, you really loaded that sucker up. Nice!!!! Lots of good eats there, you did a bang up job for sure. I do however have one observation to make, it is not a technically criticism, but rather a question too. Now don't get you shorts in a panic but, you certainly do love all of your gadgets and expensive equipment, I am jealous if I had your money I'd burn mine, but why do you own and use the worst, flimsiest, Mickey Mouse BBQ tongs ever to be produced on this planet? I have seen you and many others with the same crap tongs struggle to pick up or flip a half descent chunk of meat. Throw things away and get yourself a sturdy set of tongs, they don't have to be expensive, $12 bucks on a sturdy non-branded set will make you feel like you just won a prize. Like I said Brother, just a simple observation, maybe your tongs have sentimental value to you or something else. Please don't take offense. Have a great weekend and cook up something big. Rock On!!! Hey Phil, you don't need bib dog type tongs, just sturdy ones. Heck, I don't even own BBQ tongs, I have 3 sizes of good kitchen tongs that I utilize, and I hardly ever use the longest ones, but I am a Crazy Bastard. Just find something that is sturdy and works, and it won't cost you a fortune. The flimsy tongs look nice & pretty,and don't work well as you know, but so many people buy them. It is mind boggling. Hey Louis. Glad you are now a WSM user. I'll admit some of those cooks/videos are a little un-orthodox. lol All worked out though. On smokin meat, I'm partial to less smoke and more pit barrel style, so I don't use the water pan much. I have a couple times. It does act as a heat sync and helps maintain constant temps. I would suggest begin using it with the water pan until you get a good feel for how it cooks. If you don't use the water pan, you will have some temp up and down ranges. Like everything else, takes some using it. Now, if you want to see what else it can do, go watch the ultimate mods video. I know you have plenty of kettles, but with one small mod using 3 brackets and 3 bolts, you can make the WSM a KETTLE GRILL. Then you have a combination grill/smoker. I love it. It's like having a weber kettle which rides high like a 4x4 truck. The WSM stands up higher so you are not leaning over. I really enjoy that. Anyway, can't wait to see you cook on it.
