thank you for another beautiful video. the river is stunningly beautiful and frankly I'm quite envious of it since all the nearby river in my area are all muddy nowadays... I think the last time I saw them as clear at the one in your video was over 3 decades ago.

It is called "Fukinotou" It is the freshly sprouted bud of a butterbur (giant butterbur, great butterbur and sweet-coltsfoot) plant. It is native to China, Japan, Korea and Sakhalin. It is very bitter and has an interesting earthy taste. It is usually fried tempura style or sauteed with butter.
