In this video, you will see X-ray like footage of the Moka - Espresso Stove Pot combined with sound and video footage from my own Espresso stove pot.
The footage was made with neutron images that show the coffee-making process. The movie was made by A. Kaestner, Neutron imaging, and activation group, Paul Scherrer Institut, Switzerland. The cold neutron imaging beamline ICON was used. The movie is four times faster than in real-time.

Thanks so much for this. I felt so stupid that I couldn't quite understand how my espresso pot was working after 20yrs of using it. A visual aid made it so much more simple than a typed explanation. I wish that there had been visual aids like this when I was at school because even though I got straight A's in English I could never adapt it to science for whatever reason.

I’ve been making stovetop espresso for years. Make it on a medium heat and try not to let it boil. The slower the water transfers chambers the better, stronger and richer it will be.

You're right, the Moka water isn't supposed to boil. It works by creating pressure to push the water down and then up through the pipe.

@@Agateophobiadragon I was searching for a video that shows how how such a thing works, not how to use it and what do I find? A person who isn't capable of stating a negative opinion without insulting anyone while thinking they're on the right for doing so. How about you try staying polite next time you want to tell someone they're doing it wrong? Especially if it is obvious they did not yet know that it was wrong in the first place.

And this video was never about making coffee. Hence as mentioned, there was no coffee inside 😅 - also, it's almost no difference if you make the coffee slower with lower heat or faster with higher temperature. Maybe making coffee slower is a bit better, but nobody has time for that... And again, this video was never a tutorial on making coffee!

Moka pot about 1.5 bar, espresso 9 bar.

Moka uses 1.5 to 2.0 bars of pressure, which is the same as the commercial espresso machines used in 1933 when the Moka was invented. The 9 bar espresso machine was invented in 1947, but it still took a few years for the commercial espresso places to upgrade to the new machines.

Yeah it's totally different in temperatures. Espresso pot makes coffee at boiling temperatures. Steams coffee. And cafe sua da is prepared more slowly at lower temperature.

Close. Nice video but next time screw the top on more. When it bubbles and spurts like that it's a brewing fail. If you do this again properly I'd like to see result!

Great educational video but it's not supposed to sputter so violently, or at all. I think heat was way too high. It's supposed to be a nice calm steady flow. Just explaining this to those who may not be familiar with Moka pots.

"Though everyday usage of these pots does not require much in the way of theoretical understanding, a number of physics papers have been written between 2001 and 2009 providing models for the process, utilizing the ideal gas law and Darcy's law to provide insights into how the pot works, dispelling the popular myth that a moka pot needs to boil water to brew (the water's vapor pressure combined with the expanding gas is sufficient), and offering insights into the dynamics of extraction.[9]... "The heating of the boiler, A, leads to a gradual increase of the pressure due to both the expansion of the enclosed air and the raised vapor pressure of the increasingly heated water. When pressure becomes high enough to force the water up the funnel through the coffee grinds, coffee will begin to pour into the upper chamber (C). Boiling the water is not necessary - or even desirable - to produce sufficient pressure to brew and extraction temperature is in general not greater than that of other brewing methods.[13][14] "When the lower chamber is almost empty, bubbles of steam mix with the upstreaming water, producing a characteristic gurgling noise. Navarini et al. call this the "strombolian" phase of brewing, which allows a mixture of highly heated steam and water to pass through the coffee, which leads to rapid overextraction and undesirable results; therefore, brewing should be stopped by removing the pot from the stove as soon as this stage is reached.[13]"

No, the water is not supposed to boil. If the water boils the heat is too high. That's one reason Bialetti instructions say to fill the reservoir with cold water and cook it on a low gas flame or a preheated medium electric stove. So if you don’t get it here’s some explanation, when the water heats up it starts bubbling, when that happens it passes trough the coffee crushed beans and the coffee flows to the top. if you still don’t get I don’t any more explanation
