this would be much more helpful if we knew which figure/page you were on with each example, so we could practice along in our book... instead of watching you give the answers.

Who says you can't practice after watching the video? Chances are your book has a slightly different question, but I see your point. The goal was to get you to understand how to do each part of the problem so you can do it for anything that gets thrown at you. See link in description for practice test questions. I'm sure there's plenty of problems there to keep you busy 😜.

🤦♂️ My book wouldn’t be any different and neither would anyone else’s. It’s the book of figures for the actual FAA test, which is why the questions say “refer to figure . . .” each one is numbered for identification to use in conjunction with the questions asked.

I understand. But the test prep books (Sportys, Gleim, etc) change numbers for things like airspeeds and wind directions. If you were trying to follow my example, your answer might be wrong. But I do understand what your concern is.
