还少过一个礼拜就要新年咯!大家都忙着做饼干,我也不列外。今天做一个很多人都问的新年饼干,就是咸蛋黄酥饼干。我吃了终于知道怎么那么多人询问,因为实在非常非常的香,整个厨房都充满着咸香味。咸蛋爱好者绝对必试!!
超简单做法~外表光泽,里面一丝丝奶油咸蛋口感,好温暖~好好吃~

♦食谱 =81块 饼干=(3厘米 花型饼干磨)
4颗 咸蛋黄 (蒸15分钟)
120克 无盐牛油
40克 细纱糖
20克 糖粉
180克 面粉
20克 玉米淀粉
¼茶匙 发粉
3/8茶匙 盐
1颗 蛋黄
1茶匙 水
少许 白芝麻
(预热烤箱上下火,不开旋风170:13分钟,之后最后再开旋风2分钟来上色)
It’s less than a week before Chinese New Year! Everyone is busy making cookies, and me too. Today, I’m making a CNY Cookie that were requested by many people, which is salted egg yolk cookies. After I tasted them and I finally knew that’s why so many people asked, because it was very, very fragrant, and the whole kitchen was full of salty fragrance aroma. This is definitely a MUST TRY for salted egg lovers! !
Super easy to make~ with shining appearance on the outside, loads of creamy salted egg flavors on the inside, so warm and comforting~ deliciously yummy ~

4 Salted Egg Yolks (Steam 15minutes)
120g Unsalted Butter
40g Caster Sugar
20g Icing Sugar
180g All Purpose Flour
20g Corn Starch
¼tsp Baking Powder
3/8tsp Salt
1 Egg Yolk
1tsp Water
Handful White Sesame Seeds
(top bottom heat, no fan force, middle rack, Preheated Oven 170C-13minutes, then, turn on Fan Force 2minutes for golden color)

This recipe is awesome and easy. The cookies taste soooo good. After chilling, the dough cracked quite a lot. So I just combined them together into a ball and roll them out. Because I worked quite slowly, I chilled the cookies in the freezer for 15 mins before eggwashing and baking them. The cookies come out very well.

Oh, maybe chill too long the butter within solidify too much, thus butter will crack

@@iwen777 I didn't bake this last year. I bake this today and I am glad I did! It was highly addictive, super delicious, and aromatic! Cookies are not oily and sweetness is just right to my liking but my husband requested to make it a little bit sweeter next time. I did half the recipe and there's hardly any left for me (Mom and husband popping one after another)! I didn't even manage to snap a picture! This recipe is going to be my regular bake from the next CNY onwards! IMO, this cookie is much more delicious than the bak kwa cookies. Thank you so much Wendy for sharing this awesome recipe unselfishly! Stay safe!

Hi Wendy. I’m your new subscriber, love your videos and can’t wait to try them. In this video, what is the wrapper that you use to wrap the dough before chilling it? I would love to use the same if it’s more sustainable. Normally I see ppl use plastic wrap. TIA!

Oh I use teflon/oil paper, u can use parchment paper or plastic wrap too, it's the same

After refrigeration my dough was dry, it even cracked to 2 pieces, I press them back with difficulty because it’s dry. I watched your video again, you dough looked moist . What can be wrong? My oven do not have fan only what’s your suggestion? I have to watch the color and took them out. They tasted good. Thank you for your recipes.

If u want golden color, u can try to increase heat by 10c, put on top rack

Added some curry leaves (chopped, but forgotten to wash 😝), and make it round without mold (170C, 22mins, 8g each). Very good recipe👍 tasty salted egg cookies😍 thanks iwen 👍👍👍

Please dont think I am asking a stupid question. Please can you tell me what is the weight of the 4 duck yolks. I think they should be about 20g each. Why I am asking is we have frozen duck yolks but they are very small, 9g per yolk!. BTW, I have made the cookies and they are delicious.i used 70g of egg yolks

Caster sugar gives cookies crisp, icing sugar gives cookies flakiness. Combo will give it balance

能不能请问Wendy,我的烤箱是Cornell 56L, 放温度计在烤箱里面量时,想预热烤箱至170,放了半小时还在150。请问这是我的烤箱有问题?还是说我应该等更久些他的温度就能上升至想要的温度?还是说我一开始调更高温度,然后15分钟就会预热好呢?因为我看大家都说预热只要5-15分钟。但是我放了很久,他都还没达到想要的温度啊!正苦恼着。不知wendy能不能帮我解答。感谢你。 解决这个问题我才能好好做咸蛋黄酥,希望你能抽空解我困惑。谢谢你

你可以尝试放久些看,如果还是不能起就是你烤箱火力有问题了,要查看了。因为通常20分钟就可以达到170c了

Iwen- This cookies looks delicious. I normally read all the comments first before I start making it so I know what to expect. I do have one question. Is there a difference using all (60g) icing sugar instead of 40g Caster Sugar plus 20g icing sugar? Thank you in advance. :-)

Good to do some research before making. This will make a difference to its texture. Icing sugar will make it crumblier and soft, too much of it will make it too soft, thus castor sugar is added to make not too delicate...coz this cookies with this original recipe considered quite soft too, so recommend to follow this recipe instead of just putting icing sugar alone.

Can you show us 韓式爆米花? I use wecook123 料理123 的recipe and it was a mess! I think the 8 cups is wrong. May be the cup is 大同電鍋的米杯。Can you give it a try and let me know? Thank you :-)

请问老师,在烤第一盘时,第二盘要先放冰箱或是放室温也可以?然后第一盘拿出来时,第二盘就直接放进去吗?或是需要等温度到再放?第一次想做年饼,所以比较多问题。还麻烦老师回答。谢谢
