My story - I used another person's green pea cookies recipe for past 2 consecutive years but this time I couldn't find it again and decided to try this. In the previous recipe I used, I remembered the flour is a mixture of All Purpose flour with blended Rice Flour - to have the melt-in-mouth feel. And I read from another's comment that this turned out not that melt-in-mouth feel. So my suggestions for those want to try some modifications, can use 2/3 flour + 1/3 rice flour. and adjust the amount of rice flour accordingly based on the mouth-feel that you are looking for. Don't use too much rice flour until the cookies crumble when you are handling it. still firm enough to hold and only crumble when you eat it. Also one can also use milk wash instead of egg yolk wash - just mix some UHT milk (just enough for brushing all the cookies) + little bit of icing sugar (the burnt sugar will help to create some browning color on top of the cookies)

分享一下自己的经验。 这个食谱试了两次,两次都很成功。 我的面粉用的是烘培店买的Diamond Bread Flour. 面粉混合牛油后的确很软很粘手,基本不能手揉,否则会沾满手指。 所以就决定先用 Stretch and Fold technique, 十分钟后面团变得比较光滑,要整形也比较容易。接下来就依照Wendy的食谱,用搓衣版的方式形成面筋再来发酵1小时。 关于Stretch and Fold 怎么做,KZbin上有很多类似教材,可以看看。这个方法对于较粘手的面团帮助很大。
