it's interesting to note how dissatisfied and stagnant the crew seemed to be before Rene came to join them in Japan himself. Notably, one of the guys says that the vegetables don't taste as good as they are back in Scandinavia. And when Rene comes to Japan to join them and goes over the menus they were working on, Rene seems to instinctively recognize that the crew was not getting out of their comfort zone enough; they were trying to serve what was familiar to them back home, rather than truly explore what Japan had to offer them. Thus, you can observe the true genius of Rene, who delves deep into the unfamiliar and finds that Japan is simply more amazing than his crew might have thought in the beginning. Rene seems to truly be the heart of the restaurant.

Chef Redzepi is an interesting, complicated individual. From an artist's pov, I actually understand his ideas but I also understand the other chefs who work with him. As talented as they are, they do not have his peculiar sort of genius (and, oh yes, he is very much a cranky, slightly crazy genius). How do you see what he sees, taste what he tastes, understand that he's driving towards the ESSENCE of an idea that is his and his alone? I know I would probably curse him and admire him simultaneously.

Whatever the journey is to create new meals that only the extreme rich can afford it is absolutely criminal to eat creatures while they are still alive!! Shame on Noma you have all become too greedy for the accolades and the fame and all at the cost of sheer cruelty to those innocent creatures that with them you will not succeed. Noma you have lost my respect and the respect of many people.

criminal to eat live animals? hahaha how stupid are you! do you think animals in the wild cook their food before eating them? do you think they get their food from the freezer section of walmart? snakes, crocodiles, whales swallow other live animals - even live humans! 99% of animals eat LIVE prey unless you're a vulture or a maggot.
