Yuji Haraguchi is a butcher and owner of the fish market Osakana. In this episode of Handcrafted, Haraguchi shows Bon Appétit how to butcher a whole tuna and explains every cut of fish you would see at sushi restaurants. To do this, Haraguchi uses five knives: the Yanagi, which is used for slicing sashimi, the Mioroshi Deba filleting knife with narrow thin blade, the Deba single-edged knife used for breaking down the whole fish, the Gyuto versatile multipurpose chef's knife, and the Yo-Deba. He breaks down the tuna into back loin, belly loin, pelvic fins, bones, and collars. From there, the cuts are broken down into saku blocks and sashimi like toro, chu-toro, sinews, sankaku, akami, tuna tartare, and aburi.

Right. Idk about most folks but im american and was raised to know that the reder the better. I love taking a couple tuna steaks and just scaring them a little by showing them the heat. But not actually cooking. Lightly pepper and just chow down.

He's probably been fishing and filleting since he was a kid with his dad or something. I remember when i was about 15, this kid i went to school with showed me how to butcher and cook rabbits and hares. He'd been hunting them since he was a kid, and grew up knowing all about butchering, cooking etc. Up until that point, i never even seen a dead animal except for in the store, post butchered, in fridges. Or hung up in a butchers window. I knew about slaughterhouses and butches and where meat came from, i wasn't naive to that. Just never actually seen or done the butchering. and here i was, being educated in this matter by this kid who was slightly younger than me, who'd been doing it years. Some people just grow up learning these things as part of their childhood or teenhood. Kinda wish i had

I love how he talks about using every bit of the fish. And when he talks about something that isn’t edible, he says, “Unfortunately we have to throw this away.” That’s how cooking should be. :)

I totally agree with the whole respect for this man and his view of the animal and the usage of it... However, I wonder (as an Englishman, and thus genetically predisposed to boiling everything in the hopes of creating a good broth for stews and gravies) if one could use the tuna skin and scales with the bones when brewing a ramen broth?!

It's sad that the avg size of tuna has been decreasing over the years due to overfishing of juveniles. It's almost becoming rare to find an adult/mature sized tuna.

Finally, I can't stress the most important thing shown in this video enough; washing the blade after sharpening. To many times I've seen people go right from stone or file to flesh.

Tuna is one of the meats we really need to be a bit more conservative about, unlike cows and stuff we're kinda running out of them so dont forget to buy responsibly.

They are quite responsible too at using the tuna. They use most of the stuff that can't be sold to other restaurants. The food waste is also an issue we should talk about as well. The tuna collar looks good though. It should be tasty if it's fried.

Nah. A lot more. A typical tuna on market costs about $14/lb for grade 1. If he gets the whole fish, Im guessing maybe $6/lb?

I love this guy’s philosophy about using as much of the animal as possible. One of my favorite spots in Hawaii catch their own tuna and deep fry the collars and bones so you can pick out any residual meat and chew on the bones, it’s amazing so there are clearly ways to turn the “garbage” parts of food into amazing dishes.

I just want to post a PSA here: I love tuna as much as everyone, and eat sushi all the time, but it's worth remembering that most species of tuna are endangered to some degree. This species, the bigeye, is classified by the IUCN as Vulnerable--the same level of endangerment as African lions. Certain species of bluefin tuna are actually Critically Endangered, aka close to extinction. If these were land animals we probably wouldn't be eating them, but it can be hard to remember that these marine animals are just as important in their own environments, and they're really not doing well. Worth keeping in mind. It's easy to find species endangerment info online, and there are many tuna species at varying levels of endangerment. If you want to choose to stay away from eating especially compromised species, it's not terribly difficult to do. Thanks Bon Appetit, these videos are amazing!!!

This is a yellowfin tuna, not a bluefin, which is the most endangered and most prized. Yellowfins are sustainable and highly regulated, also I highly doubt this dude or even the channel would drop nearly 250k for a bluefin of this size either.

If people want to eat tuna in the future it may have to come down to farmed tuna, but there are tradeoffs in terms of pollution. Open ocean tuna farming, if ever perfected, would eliminate in large part the disadvantages to farmed tuna while using less chemicals. Another way to mitigate overfishing is inland farming of Aquabounty tuna, genetically modified with genes from the pout fish to grow faster while using less feed and less chemicals. No matter what, wild caught tuna are on the way out; either from overfishing or from an increase in farming. I would argue that it would be healthier and more sustainable overall if people were to eat farmed tuna over pork or beef, because tuna requires less inputs in general to get up to sellable weight.

For me, that tuna collar is actually like a hidden gem. Just roast or grill it with little S&P or if you are more adventurous, add some seasoning paste of your choice and eat it with salsa or hot sauce. It is divine.

Most canned Tuna is Skipjack, which are a very small species of tuna. Bluefin Tuna can get twice as big as the fish pictured here

And in the case of canned and flavored Tuna flakes, it's usually the scraps that is utilized. The flesh scraped from the bones, the sinewy parts, etc.
