Koyanskaya of Light only has one tail (albeit a very big one). Maybe the Dark one got to keep most of them whereas the Light one only snatched one. Based on the summoned monsters, it's likely she snatched the LB3 one --which is amusing because the creature she got from that Lostbelt is more technology-based. Edit: NEVERMIND, I missed the LB3 tank... I'm going to recheck the whole video but if I see anything Mors-related I will be be very sad because it means she would have all 6 LB represented despite having only 5 tails...

It's really interesting to see the contrast between her two forms design-wise. In her Light form she loses her fox-like attributes and gains a focus on weaponry as she ascends, but in her Dark form she loses focus on weaponry and gains more fox attributes with each ascension. She also makes for a really nice contrast with Tamamo, since while they both represent kitsune, Tamamo is more of the mischievous but benevolent variety while Koranskaya is very definitely of the malevolent variety.

And i admit i assumed koyan of dark a fennec is more due to the coloration than size of ear(albeit i think each of them is a bit bigger). Tho yes if region coloration is where i'm going for. Russian foxes are grey. And fennecs are from sahara

Jackals also don't have bushy tails that taper to a point, which Koyanskaya does in all forms that she has a tail. Koyanskaya also literally turns into a fox demon in one of her noble phantasms, and refers to her own ears as fox ears in some of her dialogue. Also, the color means literally nothing because the majority of characters with animal ears in anime and Japanese games have their ears just be the same color ad their hair, regardless of whether that's a color that those animals actually come in. Additionally, if you absolutely must point to a servant as having jackal ears, then wouldn't it make more sense to say Queen of Sheba has jackal ears, since she's actually from the part of the world where jackals live and from a culture that jackals are actually relevant to?

Idk, maybe the chaldea system works differently. Apparently you can compress literal monsters like Tiamat into summonable versions. Plus chaldea servant containers restrict immensely what characters can do. The prime example being Godjuna who is extremely nerfed compared to lostbelt self. Moon-cell seems to work under different rules and container limits.
