This is Horikawa, a sushi chef who appeared on KZbin. The blackfin sea bass is lightly salted to firm up the flesh. The salted fish that is mixed with it is sea bream sake kasu, which is not as salty as tuna or bonito sake kasu and has a milder flavor. Mixing it with the salt gives the blackfin sea bass a plump texture and a deep flavor. It's the perfect snack to go with your sake! Thank you for watching the video.
