In the manga, at least, they don't talk about a person eating it until Yuji decides to do it. Instead that conversation is about why the cursed spirits want to eat it, where Fushiguro mentioned that doing so would give them greately increased cursed energy. That's why when Fushiguro says "You can't beat a curse, you don't have any cursed energy of your own" Yuji thinks "Well I can just do the thing that the monster was trying to do, right?" and eats it before anybody can explain why that's such a shit idea. That's important, because eating one of Sakuna's fingers wouldn't even get you possessed. Fushiguro specifically calls out that they're a lethal poison and you'd just straight up die if you ate one. Getting possessed is like a one-in-a-million chance.

I like the way Megumi says "that's a lethal poison, but there's a one in a million chance..." and you naturally expect that the 1/1,000,000 outcome would be Yuuji getting powers and it being a good thing. Then Megumi clarifies that the 1/1,000,000 outcome is Sakuna possessing the person who ate the finger and coming back to life, which is actually the worst possible outcome for everybody. Itadori managing to eat it, incarnate Sakuna and ALSO retain control of his own body is such an absurd impossibility that it never even crossed Megumi's mind in the first place.
