The red thing in jar is pickle for chickpeas (balelah). And you visit the city during ramadan month, many markets and shops are closed until the 4:00pm also restaurants.

13:10 Turshi are middle eastern pickeled vegetabels, they tend to be be made of a number of vegtables toghether or separate and they are also spiced with a bit of garlic or pepper, sometimes they have a bit of sugar mixed in aswell. This guy is serving them as a topping for balilah, which is boiled chickpeas, they are also topped with cumin, chili powder and lemon, the toppings are optional but with out them it can be pretty bland, also balilah is generally considred a snack, albeit a filling one.
