I've been a homebrewer for nearly 10 years and I am still fascinated by the violent fermentations that the yeast are able to create. I'll just sit and watch my carboy bubble away for like 20 minutes at a time.

@Seekthetruth5664 have you ever watched a 40L batch of brew literally shaking its vessel off the ground during peak fermentation while the airlock is going crazy? That is a hypnotizing event and makes you lose your sense of time.

Yep it's super fascinating. Me personally I've always been fascinated by how pathogens work inside the body to make us sick and how we can use those mechanisms against it to treat the sickness. After I get my bachelor's in microbiology I hope to go into disease research to find new treatments for disease.

One interesting theory I heard is since that this specific kind of yeast is apparently not present in nature, humans might have unwittingly domesticated it. Interesting if true.

There are wild naturally occurring strains, but this strain has been domesticated. They are used to growing in these environments that we provide for the yeast and have adapted to them. Similar to how we have dogs at home while there are wolves in the wild.

Yeast is also a great example of how natural selection can sometimes result in the simplification of organisms, as we know they evolved from multicellular fungi.

This is so fascinating, thank you. I believe, almost every “Bread Baker 👩‍🍳 ” who purports to be Expert on Yeast, should be required to see this video. When I listen to their “scientific” explanations of Yeast metabolism, it makes me cringe 😬

​@@standforchange08what are you talking about? Putting what through mutations how? And simple, you bake it. That kills it and stops it from growing. In the case of drinks, enough carbon dioxide buildup and lack of food and they die out naturally. Same reason if you were to deal something in a vacuum chamber and turn off the air, or deprive them of food long enough.

I think your footage would be epic for (moving) backgrounds. I would buy it instantly, without a doubt. I love having multiple background that change every 10-30 minutes. These video's would be epic. You only have to add the name of the substance (yeast in this case) and let the background slowly develop.

What sort of microscope set up is this? More specifically is it a 10 x eyepiece with a 100x emersion oil objective? I've recently bought a microscope off amazon, that said 40x up to 1000x, the lower end of magnification the images are clear and crisp all the way to 400x, the 1000x is very blurred and washed out 😔 but that magnification is with the supplied x25 wf eyepiece and x40 objective (non immersion oil kind). Wanted one to keep an eye on the microbes of my kombucha brew, as well as for the fascination of microbes and microbiology. Also, sorry for the long question, wish I had your phone number 😂 but is this using dark field?

Haha Hi Karl, Yes this is a microscope with a 10x eyepiece and 100X oil immersion objective. Oil is usually needed for the 100X, sounds like you need immersion oil. Make sure that objective is compatible with oil. And yes, this is a mix of bright-field and dark-field.

@@sci-inspi 😁 Perfect response, I thought as much. Seems the objective lens is way more important for clarity at higher resolutions than the eye piece. I'm pretty sure my 40x objective isn't an immersion oil one as you'd have thought they'd mention it somewhere in the description or in the instructions. There's nothing to indicate on the objective itself either, just says 40xs, no mention of oil, so instead of risking breaking it I might send it back and order one that comes with better quality objectives. You live and learn. Thanks for the quick reply. Your videos are awesome 👌

Are yeast sensitive to water acidity? I guess they are okay with somewhat acidic environment. I however wonder if fermentation can be optimized by adding a buffering solution or using other means of reducing the amount of carbonic acid (e.g. sparging with nitrogen). Thanks.

Yeast or sour dough are just traditional way of raising a dough which are inevitably outdated , nowadays the most common and popular to make a fluffy dough is by simply putting a baking soda or baking powder

Hi, Can you make a video on bottled beer or wine under microscope? Multiple brands. Where does the fiz come from? Is it natural or artificial? Do yeast and other bacteria make their way to final product?

Homebrewed beer does have yeast in it, as that is how the carbon dioxide is produced after it is capped in order to make the fizz. But in commercial brands the yeast is killed off, it is filtered and the fizz is added the same way it is added to soda pop before it is bottled.

What is the process behind the cultivating Saccharomyces Cerevisiae. I understand reproducing and harvesting, but how to separate and isolate only the yeast cell in first step, from wild yeast or sourdough starter?

Given a sterile environment, food, and the right temperature, yeast will grow vigorously enough to kill off other competing wild yeast, germs, and fungi. I imagine if you wanted to capture a wild yeast, all you need do is create the right environment, expose to air for a short time, then seal up the environment (but use an airlock to let the gases escape), and let it grow. Try it often enough and you'll eventually find the right kind of yeast. San Francisco's sourdough bread used a strain of wild yeast to give it that signature taste.

Have you seen them reproduce? Is that what they do? Or only on long-time frames of many weeks? Or is it when you add some yeast to a bottle of sugar, that after an amount of time there will be ALOT more yeast cells? And if so, is this why bread takes time to rise & slow rises are generally better? Is temperature also of influence in this reproduction? How does temperature help in the consumption of sugar? And in the reproduction cycle? How can you dry out some of the yeast cells that have been reproduced?

Yeast need time to acclimate to their new environment before dividing, which in the right conditions should only be a few hours. They need sugar and the right nutrients to divide. Warm temperatures will speed this process up. I am not sure how to dry out yeast for storage.

Hmm, so the first batch of mead I made last year I decided to drink a cup of it daily to experience the differences from day to day. The early stages of this fermenting mead made me feel extremely healthy, it cured a bunch of issues I was having, I read this is a common thing in Europe during the seasonal harvest, like they have areas in super markets and stores which sell wine in it's early fermentation stages. I have been reading up on the effects of microbes in the body and how they can cause extreme problems in the body like depression and leaky gut, something to do with the dopamine and serotonin? I am not fully sure yet but it's pretty interesting.
