I understand it better after watching a few videos on the natives counting coup and reading some comments on here and Reddit. You need to listen and read in between the lines of what Kayce was saying, as someone said his letting Grant aware he has presence not only in the physical (through the navy seals team community) but the spiritual as well and counting coup is more deeper than threatening an enemy while showing restraint. He told Grant before glock knocking his head “counting coup” that he will trade his family for his; the family he is referring to is not the ranch or Beth but Monica and Tate, if you remember he had to choose a path and once he does everything will become clear. Therefore meaning by doing that action on Grant he took a piece of his soul which he stated to him so not only did he trade his families lives spiritually (to prevent them from harm) but also will know if Grant tries anything again as Kayce has marked him.

This whole scene is nonsensical, Kaycee should have killed him. This guy has the same type of tactical training and more different types of training with the CIA. He owns a security firm that killed a governor in his home and was paid as the show says 40-60 million dollars. After this encounter he can make his family disappear and have his firm destroy everything Kaycee loves.
