OK... sorry... have to admit.... I used to make 'cabbage-rolls', with my mum... for many years (large cabbages grown in her garden) and with lots of tomatoes-made into a thick, luschious sauce-- and different kinds of meats, herbs y spices ... cooked and maybe... or maybe not with her 'Homemade Saurkraut".... Then frozen, until the winter snows would finally softly fall .... We could never open those 'Cabbage Rolls' until it was 'mid-winter. It was then, as a child I realized why we 'cooked all those beautiful cabbages with their awesome smelling ingredients'.... And, now. I remember those smells of my childhood, as you do yours Ken. Thank you so much for sharing with all of us! Oh, yeah... sorry... dah (lol, I am blonde)... I got off the path of telling you.... Thank you for your 'Cabbage Rolls' recipe!! I did try it for a change, a couple weeks ago. They were TOTALLY AWESOME!!! :-)

Ok, I have to comment (finally) Ken, because when I first saw your channel a month + ago, I thought, "what a sweet man", and at the same time loved your recipes! I subscribed immediately and was glad to get a notification today that you posted another recipe. You've really 'grown' with your videos: making the sound clearer, softening the music-- so we can actually hear you (e non pazzo). And, I did watch probably all of your videos within the first few days of seeing the first! I love this recipe that you posted today, however... I actually made this on Monday of this week, but, not in meatball form, but a 'sort-of' casserol in a baking dish, topped with lots of local cheese (I live in CenAm at this time). Anyway, I learned from YOU, my dear, "How To Temper", so that eggs don't coddle when adding to a hot broth! (Gracias!) And, my 'meat-mixture with FRESH lemon juice and herbs/spices... turned out so well... oh, and I did throw some fresh tomatoes in, just for good measure.. :-) Keep up the great work Ken. I will be looking forward to each and everyone of your new posts!

Ken, I'm just amazed that you don't have more 'followers'!! I saw a post at one time from someone who used to visit 'Greektown" in Detroit. I too used to frequent that area and loved all the food there!!! Hmm, so I guess that's why for so many years, I've been 'trying' to cook a lot of Greek dishes! I know you are from Greece, (if only by ancestors)...same here with my ancestors, coming from Europe. So, I love ALL food!!! LOL! I'm even amazed that you respond to each and every person who writes to you, and I want to thank you...thank you for writing to me! I know you have 'fb' and all those other medias. I got rid of 'fb' after mine was 'hacked' a couple years ago. So...You Tube is my 'vice' and where I can watch what I choose (no Hollywood, pls), and in English. So, Ken, thank you again! :-)

Sadly, Ken passed away in late January, this year. Much too young at 53. Yes, medium ground beef should work.

Lookin Good, as usual Ken.. Tell me, if i may ask, "How old were you when you started to cook?" I ask because i was very young myself and everyone in our family could be found in the Kitchen and they all could really cook. Most of the time no one measured anything, lol To this day i have a hard time with measuring unless it is new to me. Happy to get this from you I have all the ingredients in the house now so i may try this over the weekend.Many thanks for sharing..

Questions again?? Can you use Garlic in this and can it be made into a Meatloaf dish? Have you ever tried it like that? I can taste it now lol It looks very flavorable.

You can use garlic but I kept it traditional. As for the meatloaf pan??? Not really sure how suitable it would be.... good luck:-))

Well i think you would have to do the Sauce separately then pour it over the meat rice mix but i'm not sure how it might work I have to think about that first but i will start doing it with the way you did it with meatballs etc etc.

Thank you Ken and I'll use basmati rice, was considering cauliflower rice but don't want anything to ruin this dish. Rice absorbs and cauliflower releases liquid. Besides basmati rice is a healthier choice compared to other types of rices. Can't wait. 😊
