Had a think after my first comment. As much as i love laksa and tried most of the famous ones out there, the only one that really blew my socks off was Zhen Shan Mei at Depot Road. This was during my NS days many moons ago though. Went back to try it again a few years ago after they moved and it just... Wasn't the same. Have eaten many bowls of good laksa since those ZSM days but can't seem to get that BIEH experience again. Thanks for making this man. Hope through this series i can find success at last

You will be surprised that good old laksa broth doesn't use prawn broth as base. It's the quality concoction of rempah in it that makes the difference.

1. Suppliers do sell frozen prawn heads/shell wholesale. No prawn doesn't necessarily mean no prawn heads/shell 2. Crabsticks are not made from 100% flour and dye. It is made with surimi (fish paste) and fillers depending on its recipe. 3. Characteristics of laksa (thick white vermicilli) noodles and why it is being used in dishes like laksa and beef noodles is because it doesn't absorb much moisture from the gravy. The gravy and the noodle stays the same consistency from start to end of the meal. Also the laksa noodles comes already fully cooked and gelatanised in the packaging. There is no need to boil the noodles before being able to use it. It can be used after reheating gently. It is suitable for laksa stalls which do not need to have a boiling pot of water maintained at 100C to cook noodles like ba chor mee stalls. This one takes up a lot of $$$$ in gas usage.

YES!! You completely voiced out my main grouse about chu mifen. It's such a substandard noodle. I hate it in laksa, hate it with fish soup. But I suspect that's because the chu mifen that hawkers use in sg is made from low quality rice flour. If you get it from somewhere that uses freshly milled rice flour/water it'll probably be much better but way more expensive.

I am a food lover and I travel for food everywhere in Singapore. I am not going to gatekeep this place anymore but the best Laksa I have ever eaten in Singapore is at Bedok South 58 Market - Amy's Laksa. Try ordering their noodle with Thin Bee Hoon and it's super good. Only Bedok Locals know about that stall.

Toa Payoh 94 laksa, btw, Yishun 928 laksa kicks more punch 25 yrs ago when they first started, the soup actually mellow down as the owners age, back then the soup has so much dry shrimp tat it’s actually chilli hay bee soup

Oh yes it used to be much better. And they are very sweet. If you don't want cockles they will replaced with crabstick which is rare to find shop owners that will do that. Super value for money!

Imitation crab meat is made from processed fish paste. Crab flavouring and food colouring are also added for taste and impact. Hawkers often add it to replace ingredients that cost more so that customers feel like they are getting at least something for what pay for.

Georges at Eunos , and Janggut Laksa is the same recipe, but inbetween got some changes. People who blind taste test say Janggut laksa at queens way taste the most originial to the famous katong laksa they taste in their younger days.

The comments on Yishun’s 928 laksa are really all spot on! As an Yishun resident it’s a decent bowl although there are better ones out there. Looking forward to this series! Would be great if you could try the Katong Laksas along the East Coast eg 328 Katong Laksa, Janggut Laksa, Katong Laksa (George's). Also the well known ones like Sungei road laksa, zhen Shan mei claypot laksa.

Thick rice noodle never been my fav. I grown up eating mix bihun+yellow noodle. Bihun help to cling all the soup & yellow noodle add the texture to it!! Superb

Yah please switch over to this, the thick rice noodle is too slippery and has the least surface area for the gravy to cling onto + lacking in texture. Its a personal preference but I think BeeHoon Mee offers the best balance and OG way to do it.

Agreed, traditionally only thin beehoon mee, no prawn, very important is the taupo must be cook until very soft, broth cannot be too thick otherwise feel sick after few mouths. To me 928 and 94 Toa Payoh fulfilled the above 2 criteria.

Despite the broth-capturing nature of bee hoon - I still prefer the thick rice noodles for laksa for the mouth-feel. Feels more balanced, makes laksa more enjoyable and less heavy? Won't get too soggy after 5 mins of waiting too

I'm sorry but laksa and thick bee Hoon is still the undisputed best match for me. Hope along the way when you try the other laksas you'll be convinced why. Also, while sambal does play a part on enhancing the flavor, the best laksas need no sambal to make you want to keep going back for more. Other than 328 and janggut, i will definitely recommend Guang Fa Laksa at Havelock. You have to give this some airtime

Hi Alderic, I am a straight man. Everytime i see you, it's strikingly how perfectly you encapsulate the standard-issue singaporean millenial guy archtype. You like your hawker food, and you have strong opinions about it. When you need an unoffensive comforting bgm, you use kerning city. When trying to express the concept of synergy/partnership, you make a wargreymon+metalgarurumon / hinata+kageyama reference. You cannot bring yourself to do the gen z broccoli hair, but you try to move past a mono-uniqlo wardrobe. You dont cover your sg accent with some fake affectation, but you will pronounce gelato/tonkotsu the proper native way. AND YOU ARE SO LOVABLE AND RELATABLE AND ENDEARING WHILE BEING THE WAY YOU ARE Thank you for demonstrating that the stock-standard sg millennial guy can be weirdly compelling and attractive. Personal Take:: Thick Bee Hoon is at it's best when it's the dried packet, rehydrated version, NOT the fresh one, it's more al dente, and because it's rehydrated during cooking, it absorbs WAY more flavor from whatever it's served with than it's fresh bee hoon varient.

Have seen ur episodes 1 & 4. But u missed Rochor Laksa. Blk 27 @ Jalan Besar or Kelantan Lane. That one is also a good one. My favourite so far. Almost like yishun except with short noodles. No so much a nonya type laksa. It is more savoury than sweet. Nonya laksa is sweeter.

Their Laksa ($6 - think is weekday lunch only) I swear is good but how close to Rochor I cannot really grade. I drank all the soup like @ rochor, so please do give it a try. Port26 is actually more of a Zichar restaurant.

But Singapore/katong laksa is a thing that is distinct and on its own, isn't it? As a Malaysian I've always thought of it that way - taste-wise too, since I love Singapore laksa like I love curry laksa, nyonya laksa, curry mee, etc, but the lines are never blurred. Will leave it to my Melaka compatriates since I rarely visit.

I have been trying to find the difference in katong laksa but the only thing I found was that they cut the noodles. broth wise, the recipe is very very similar.

@@Alderic. I think there is one distinction. Katong laksa uses dried and chopped katong leaves. If any nyonya/curry laksa uses it, it's always fresh laksa leaves, so there is definitely a difference in taste.

You should try mee kia laksa in other store. Very hard to find in singapore as you can only find in shop that sell laksa as side kicks to prawn mee or BCM.

Oh dear, that is no longer laksa then. But curry laksa which is Malaysian style. Laksa, particularly Katong laksa, is to be eaten with short thick rice noodles with spoon. That way you savour the rempah broth along with each mouthful. Not the Chinese way of eating noodles per se.

Please try the OG Sungei Road Laksa at 27 Jalan Berseh, #01-100, Singapore 200027 This is the best Laksa I ever have and is something my parents intro as they have ate it for over 30yrs old in their youth where each bowl was only 20cent. They cooked the noodles in the laksa broth and the laksa is only cook by charcoal.

well would u like to do a review on Prawn noodles soup, there is stall at Broadway Coffeeshop at Blk 414 Yishun Ring Road, long queue always. Closed on MOnday. Aside from Prawn noodles, they also serve very delicious Lor Mee on weekdays (not weekends), ingredients like fried fish & braised pork eggs are all inclusive. Prawn noodles is superb. You need to try.

Australia has a month-long "Darwin International Laksa Festival" (every October)... and the important questions: eg (A) "To HUM? Or "No HUM"?" and (B) Which Katong Stall has the Best Laksa? (p/s #1: Will there be a "Coconut Club" equivalent for Laksa? ... and 2. MY has many varieties i.e. pls consider also Sarawak Laksa; Johor Laksa; Penang Asam Laksa, Kelantan "Laksam", etc).
