Im so happy to have see an Israeli cook. The combinations of ingredients are delicious! The best food I ever eat was in Israel. For example Djagnoon, Hamim, the Yemenate, i just love it. There is not one restaurant in The Netherlads how sell this food. I will Follow you and hope to see one of those dishes one day.

There is a cookbook by ottolenghi called „Jerusalem“, it’s the best cook book I ever had. You should check it out.

Israeli food is really Palestinian, which Mr Ottolenghi acknowledges.

hmmcinerney lol well it’s really well described in his book and you are not fully correct, let’s leave it at that.

Peter B. Since Israel was only ‘founded’ - let’s leave it at that - after WW2 and this is an old cuisine it did not spring fully formed from the Zionist cause.. After all cultural appropriation is a time honoured Colonial tradition. I like and respect Mr Ottolenghi and believe he’s well aware of where the food comes from and it’s not the infant Israel.

hmmcinerney See that’s exactly what I was saying and why the book is called Jerusalem and not Israel. It captures all of the different influences very well and doesn’t claim to be the origin of any of those. Yet and still there are way more influences than just Palestinian ones.... and cuisine and foodies shouldn’t care about politics... it’s all about the flavors.

Black garlic is still hard to find in Berlin. Keeping an eye out for it because I want to try it!

You won't find any Ottolenghi recipes in a Traditional Middle Eastern Restaurant. If anything he is Middle Eastern Fusion, but really, like most of the great chefs, he transcends any one single cuisine. Check Simple out. The recipes are really delicious!

Lucy Belle Scott. mono sodium glutamate ... it’s what’s used in Chinese takeaway food .... it’s chemically enhanced taste powder ... nasty stuff

only fructose, glucose and water are less toxic than MSG, it's not that bad. It's not "chemically enhanced taste powder", it occurs in nature - you can find it in tomatoes, grapes, mushrooms...

Suzi Neale Lol MSG is fine. The only reason it’s demonized is because of old racist junk science.
