Seeing expert guests is awesome! I'd love to see more of the humanities side of coffee studies: history, sociology, anthropology. Economics, logistics, botany... would all be great topics to see here as well.

As an italian, I loved to see a different perspective about our coffee culture than the one we made out and talk about. It was illuminating to learn about the connection between fascism and italian coffee culture (roasted chicory coffee actually blew my mind). I can feel that something is changing now with the specialty coffee wave, and I cannot be more than happy about it, as a coffee lover! Thanks for the content to both of you, love from Italy ❤

I explicitly bought a moka pot for camping. Combined with a hand grinder, it makes for an excellent coffee by the campfire on cold mornings. And the way it functions, doesnt matter if I'm using a proper stove or just set it over the fire, it comes out great either way.

I love my Moka Pot. Learning how to use my 6-cup Bialetti Moka Express (received for Christmas 18 months ago) is what got me into specialty coffee. It was my daily driver until replaced by my Aeropress about 6 months later, but still sees use a couple of times a week. Primarily for weekend “moka lattés” and “moka cappuccinos.”

Noa's point about meaning with these objects is very on point! The Moka pot is a ubiquitous item in kitchens throughout Latin America and forms part of the culture around coffee drinking, family, and community there. It's an object that appeals to most families there because strong "espresso" coffee is a part of the every day experience. Although I am less familiar with the Chemex, it strikes me as more of an elegant art piece for brewing drip coffee that perhaps does not have the same cultural connection or mass appeal like the Moka Pot. Great video!

I have and use both Mocha pot and Chemex weekly. Also a gaggia classic. I like drinking different types of coffee depending on my mood.

I really enjoy these videos where you bring in a guest and they talk about various aspects of the industry or about coffee would definitely love more of these! I rarely see videos discussing the social aspects of coffee and would love more of these!

Very interesting and a different take from what we normally see! I appreciate it! I first met the Chemex in the 1980s when I was an undergraduate. It was pretty common among the "alternative" student culture of the time, perhaps because it was low cost, and, with a cloth filter, felt more environmentally friendly. I was not a coffee drinker at that time, but did admire the design and the "lab equipment" look. In any case, I don't think it disappeared entirely but just went underground while mainstream coffee culture was buying up Mr. Coffee's.

Great story guys i knew also that Bialetti was an expert of allumiun he used to work in alluminium factory in France thats was also the reason why he used the allumiun!!!also they had a strong marketing thanks to his son when he inventend the logo at the time as you know in italy espresso was complitely different that what we see today has a black cup with a fake crema made out of sugar and coffee drops !!!! thank u so much guys

Also, not many know that it's very easy to distinguish an original Bialetti from a "copy". The Original Moka always has 8 sides, whereas the copies cannot have 8 sides (that's patented or something of the kind, it's a protected industrial design) so they typically have 10.

Awesome video. What I'm surprised wasn't mentioned is the moka is used in more than just in Italy. They are super popular in France, Spain, and most of South America. It's probably the best selling coffee "machine" ever. Have a sweet spot for it but even in Italy they use espresso machines now in the home

I believe I did say that! If it wasn't in the video, which I believe it was, then apologies Perhaps edited out was my saying that following ww2 when 3-4million Italians left the country, they ended up all over the world with moka in hand ha! This explains the beginnings of the moka in South America.

I like both coffee and history, so this was a perfect video. I started using a Chemex in the early 1990s ... with pre-ground supermarket coffee. It made an excellent cup, however, after several years of breaking one every year (in the sink, while washing it) I switched to a Melitta cone, and I'm still using that same cone today. I might get a Chemex again. I have a variant on a moka pot, much more of an art object. But I don't care for that style of coffee, so it remains an art object only.

very valid to keep one as art, for sure. And the breaking chemex is surely an annoyance, but they are definitely built a bit more robustly today than the early 90s! give it another shot!

@@LanceHedrick My moka pot is a very, very different design, no upper section, just a pour spout, with gold color art deco detailing. It's definitely an art object. Chemex, Clever dripper, vacuum siphon, Cafelta Robot ... so many brewers, so little time!

vintage ones are super cool! and I have an issue with the filters (3 and 1), the chute, and most of all, the material, which makes thermal stability impossible. but they can make good coffee! just not super predictable. And lots of paper waste for me since I don't brew more than 15g doses

Just bought my 3rd Moka pot. Started with a 6 cup. Now we have a 3 cup and a 12 cup moka pot. We make it Italian style then add Cuban style sugar. Add steamed milk 50/50 for a Coridito and wow.

This was very interesting from a cultural point of view. It's kind of surprising to me that the Chemex is (IME anyway) pretty rare in the UK given the James Bond endorsement, in general the French Press (Generally known here as a Cafetiere which has become a genericised trademark like Hoover) is probably the most common non-specialty manual way of making coffee and with a different taste and texture again to the stronger Moka pot and the cleaner taste of the Chemex with it's heavy filter paper.

I would also make the argument that the popularity of the chemex is also tied to the sci-fi futuristic hopes and dreams in post WWII America in competition with the USSR. The US was trying to display the technological innovations that they had that made life better then the soviets and this piece of almost chemistry equipment was a prime example of how beautiful and functional life in the US was.

Interesting idea at 14:29, I thought (also unfounded) that the comeback of the chemex and it's use in the specialty coffee world was because it was more "operator-dependent" and so the results can vary between baristas and their recipes.

All quirks aside I love my chemex and have been using it daily for several years! BUT... I've been thinking of upgrading, streamlining, and making my routine more consistent, and repeatable. My problem is that I brew for myself and my wife each morning and we each drink about 15-18 oz of coffee. My 10 cup chemex allows for this and the occasional hosting of a few more people. Everything seems geared toward brewing individual cups. I love the idea of something like a V60 + carafe but can't find anything that is simple, elegant, high quality, and allows for over 65 grams of coffee. Not to mention water required to preheat, bloom, brew, etc. since finding a quality kettle close to 1.5 liters is challenging. I'm considering alternatives that are simple, clean (no plastics), and fun. A chemex-like ritual with the ability to brew up to 10 cups! Thoughts?

Nooooo..I have 2 moka pots and I use them!! The 3 cup is for me, the 6 cup for guests. They live on my boat where I live 6 months a year. I have an espresso machine at the house. And no, I am not wealthy. I live in a modest house (1,000 sq ft) to afford my modest boat. Livin the dream on a budget. It is also worth noting that in the 80s melita pour over became popular thing. The melita was actually a feature on Murder She Wrote.

I love how informative your videos are, but I think I would benefit from a visual of the coffee produced from each device at the end of the video. This would potentially help summarize the differences in coffee production from each. I think Noa being able to point out subtle nuances of each coffee, like the oils present from the Moka pot vs. the lack thereof from the Chemex, etc. Anyway, great video!

This is such an excellent vid. Absolutely love the link with sociology & design. The link with industry and supply of materials is really interesting too. Definitely do more. In New Zealand we were right into the Moka pot and French Press (we call it a Plunger!) from early 90s, but almost no sign of the Chemex. Everyone had a Moka for camping & you could buy pre-ground coffee for Moka & FP in supermarkets (Blue Mountain was the creme de la creme). It wasn't too long before everyone had a FP, and the arguments over the best method! Was it similar in North America or was it more a design symbol but not used?

at least in the US, i feel like the biggest thing holding people back from trying something like the moka pot is their lack of a haflway decent grinder and American's dependence on pre ground coffee.

I think it depends on what part of the US a person was raised in, or whether or not someone from smaller cities, or towns visited larger culturally diverse cities - prior to the internet obviously - or whether or not you traveled outside of North America. For example, if raised in NYC, Miami, Chicago, Seattle, Portland, SFO, Los Angeles, or San Diego, these cities are culturally diverse with populations of people for whom moka pots in the home were common.

Super interesting Video! A loved the in depth insights. This feels actually more like a (video)podcast format. And I would love to see and hear more of this! Maybe as constructive critique. Standing behind a counter an talking doesn't feel like "coffee talk", more like a 90s TV Morning Show. I would love to see a more comfortable format (sitting!) and talking into mics. Also a little tip coming from a little expertise from radio: try not to interrupt the talk of your guest with "mmh, yes, okay, yep" all the time. it's a habit that interrupts the listening. do this, when you feel that your guest has finished. And as always, I love your videos. this is just my two cents.

You called it. As far as brewers go, the Chemex is a perfect flower pot, utensils holder, carafe for other brewers or place to rest and drain the brew basket from your batch brewer when you’re done brewing.

moka pots are now available made from stainless steel which I would prefer over aluminum because coffee being an acidic beverage can leach aluminum into the coffee. Probably not good to ingest aluminum on a daily basis.

Curiously, it is now becoming harder and harder to find stainless steel moka pots. In the '80s or so, Lavazza begun producing a SS moka pot (Carmencita) and it launched a new "wave", but Bialetti always remained faithful to aluminium. Now Bialetti produces bi-metallic moka pots, and Lavazza makes the Carmencita in aluminium instead of SS. Times change. Aluminium cannot be put in the dishwasher. Stainless Steel cannot be worked in a way that it is easy to clean (in my old Carmencita there is a groove at the base of the collecting vase, and it's not so easy to clean the central "tunnel") but it can be cleaned in the dishwasher. Overall I prefer SS.

Might have to dig my parent's old Chemex out from the back of the cupboard. :D The other piece of history that'd be interesting to learn about is how the moka pot became popular in so many Latinx households.

I sorta mentioned it but it was due to the massive influx of Italians that left Italy following ww2. About 3-4million fled and many ended up in South America along the west coast.

Please don't use Latinx; be sensitive to the overwhelming majority that prefer Latino/Latina/Hispanic. Imposing Latinx on them is linguistic imperialism.

@@LanceHedrick to that end, and maybe someone has already done it, but it'd be interesting to explore how Italian espresso culture changed and evolved specifically in Latin American countries. How the various drinks and snacks differ.
