Because I have a limited amount of freezer space (which is usually full of berries and meat), I like to make a version that is shelf stable. To do this, just follow the recipes just as you have shown in your video except that you will leave out all the dairy and flour. You will also want to leave the ingredients in the diced stage (but still sautéed). Follow every stage of your beautiful recipes, then just pressure can in pint jars. When you're ready to use them, that's when you'll finish up the recipes by adding your dairy and flour and using your emulsifier to chop everything really well. It tastes wonderful and will last on the shelf for 3-5 years, although I don't usually make enough to last that long. Thank you so much for your video and the yummy recipes which I got from your blog. As I share with friends and family, I will definitely be giving you all the credit, thank you. Quick tip from an Old South cook: skip the butter - use melted chicken fat (schmaltz) saved from any roasted chicken. It reinforces the chicken flavor. Also try a Bouquet Garni of sage, fresh celery leaves, parsley, and a fresh bay leaf (or half of a dried bay leaf) a few whole peppercorns, and one single whole clove (I put everything into a steel tea ball which makes it easy to fish out) when making your broth. Fish out the bouquet before using. It really enhances the chicken flavor. For a lighter, sweeter chicken broth for lighter meals, leave out the sage and bay leaf and use tarragon and thyme, instead (my mother's favorite combination). Love your recipes, Cassandra! You inspire me to return to my roots.

You can use coffee filters too. They stand up to boiling very well. I use them in jam making and fig preserves. It's been a long time since I've bought cheesecloth.

Start checking your canned soups. Many will say bioengineered ingredients! Campbells is one of them! This is not good for health and like glyphosate is effecting fertility and causing autoimmune and cancer. Eat organic non GMO non bioengineered when you can! I’m always happy when you post a new video! I know how much work goes in to this and you are one of the most engaging people on here! Much love ❤️

Thanks for sharing this important information! I get how frustrating it can be to go “natural,” especially for busy parents. It’s difficult for me and I’m single! But I have autoimmune disease and conditions from inflammation (arthritis, bursitis), and I’m convinced all of my conditions are a result of eating typical processed foods. I now try to eat everything as close as possible to fresh, local, organic, and homemade from scratch. I’ve been working on this for 5-7 years and have made much progress, but there’s still more I can improve. I haven’t bought canned soup in years!

I check everything now, it's getting to where it's slim pickings. Trying to grow and raise as much of our own as possible, not only to save money and not end up dependent on the system. But also it's not processed and I don't have to wonder what's in it.

I make this for my keto recipes. Cornstarch is not really keto friendly or good for Type 2 diabetes. Xanthan Gum will thicken the soup but I actually prefer to just let it simmer a bit and it will thicken on it's own. This tastes so much better than canned and contains only good ingredients. Thanks for posting this. Love your energy.

Important note: The type of canning jars you used for the first recipe are NOT freezer safe! The only canning jars that should be used in the freezer are those without shoulders (for example, see 9:19 ). Jars that have a shoulder (for example, see 3:44) can break in the freezer, due to the expansion of the contents as they freeze.

I had one jar break that had the shoulders. I think the reason is that I filled it to the top whic hcaused the contents to have noway to expand without breaking free. Am I right?

That's exactly right! As contents freeze, they'll either expand sideways or upwards. Generally, because of the glass holding in the sides, it tries to go up... In a non-shouldered jar, the contents are free to expand straight upwards. But in a shouldered jar, the glass curves inward at the shoulder, restricting the content's movement and creating pressure. If too much pressure is created, the only thing it can do is break the glass.@@SuperWonderbar

As someone who has a son who is celiac (and I make sure that I keep gluten items out of our house), let me tell you - it’s very difficult to find gluten free cream condensed soups. I can easily adjust your recipes to make them gluten free (and vegan when we want that). Thank you so much!

I also have celiac disease and when making creamy based soups that need to be thicker I add instant potatoes as a thickener and it actually works beautifully

Hi Cassandra. Oh yeah making HOMEMADE Cream Soups ~ the only way to go. I can't remember the last time I purchased store bought creamed soup.....maybe in the late 70's LOL😂. Your GreenStalks look absolutely amazing. I can't wait to start harvesting fresh veggies from my GreenStalks. This was a brutal summer here in Las Vegas (zone 9B) with daily TRIPLE DIGITS. I lost quite a few plants as a result UGH🥵. God is finally lowering our temperature (a tad bit). I will start planting my Fall garden next week...wish me luck. So glad this popped up! I’ve wanted to switch to homemade for these creamed staple soups! I love your channel! I’m half way through this and think I’ll make these minus the flour and cream and then can in pints of half pints. Then add the rest when I use in a recipe. I have very little freezer space. You can also use King Arthur measure for measure gluten free flour and use it exactly like the regular flour. And just make sure you cook the flour 3-5 mins before adding liquid. You will not be able to tell the difference if you are gluten sensitive or have celiac disease.

I'm also imagining freezing it into ice cube trays and just tossing as many cubes as I need into recipes. My ice cube trays are two tablespoons, so 8 cubes per cup or 10 per can. Then I could just chuck all the cubes into a gallon container to make them more stackable. Ooh, I'm having a moment here. Suddenly I'm imagining using dehydrated everything, including bouillon and powdered milk, to end up with a just-add- water powder. I bet a "can" would fit into a half pint container or old jelly jar. It would be shelf stable, so as to save freezer space. 🤔 I'm off to do a little research and maybe some recipe testing. I am so grateful for your channel, Cassandra. I only discovered you a few months ago and have been binge-watching you ever since. Subscribed!

I love your style of cooking, and I love the fact that I can make easy substitutions in most of them, as I am celiac. Especially the cream soups. I like to make double or triple batches for pantry or freezer. That way I can enjoy a lot of recipes I used to enjoy before being diagnosed. I just love your blog and enjoy watching them all. Save space! Freeze them in freezer bags. Lay them flat on a cookie sheet until they are frozen then they stack in the freezer and thaw in a flash.

I stock up when I see $7 organic milk half gallons on clearance. I got 3 recently for $1.50 each. I also score $9 organic yogurt quarts on clearance for $3. I just opened a carton of this close dated sale yogurt I got in late May and it is 8/18. I used it to make a yummy coffee cake. It was just fine. So I am just going to use it in other baked goods to freeze. I am always scouring the organic and other food clearance items. My project now is clearing a freezer shelf for deals I find. Time to make my own “cream of anything soups” too. Thanks for all of your wise videos. It makes cooking and stocking up fun!! 🤩 Oh I love the crock pot broth trick!! You are the bomb diggity girl. 💕 also cold water works better for “ slurries”.

Hey love! So good to see you again. YOUR kitchen sounds like the place to be and I can tell that you are a grocery store guru. I am a little hen in the grocery store, huntin' and peckin' all around for those reduced sale items, seasonal items, and collecting inspiration from frozen or boxed meals that I know I can make at home. "Cream of anything" could have been its own video! That's probably my favorite because it comes out a little different each time, but SO GOOD! Thanks for the cold water slurry tip!

I made my first attempt at canning creamed soups last weekend. OMG, the taste was out of this world !!! The grocery store cream of soups are mostly bland and used as a thickener. I can say I won't use those any more. They are expensive and have no taste. I think I have some celery to use up so that's next in line. Thanks Cassie

You can still can them if you use a pressure canner and do the time and pressure matching what you would do for meat. We canned butter last year and it is awesome. You just need to shake the jars every 5 minutes after you have taken it out of the pressure canner until the jars are cool and when you open the jar the butter is just like butter from the store.

Another great video. I have never thought of freezing creamed soups. I think I will try this later but with ice cube trays. Frozen soups take so long to defrost in one big amount. I love how relatable all of your videos are.

coconut milk, or coconut cream could also be a good nondairy substitution. I often find myself using canned coconut milk and seasonings as a substitute for cream of [whatever] soups as an ingredient when I'm bringing something to a gathering and I know vegan friends will be present.

Great recipes. Keto/carnivore person here. Milk and the flour are both no-no's, but I have seen others successfully thicken soups with cream cheese and/or beef gelatin. I will try both to see which one works best. Thanks for the video.

@@ravenlaughs9757 For health reasons, I am carnivore, so no plants. I will use a light amount of spices once a week, but that's it. Heavy cream is fine. I will sometimes add heavy cream with some water to thin it out. Milk is the secreted by the mammary glands of female mammals, so there is no such thing as a nut milk. 😄 But thanks for the suggestion.

You can also use heavy cream as a thickened sauce by pouring it over whatever you are baking. It will thicken as it cooks. If your food is giving off a lot of liquid, you can wait until it's almost done, drain the liquid and then add the cream before putting back in the oven.

I loved all the options/variations of how you can adapt these cream of soups. We are supposed to be a gluten/lactose free family. It can be too hard or expensive to buy pre made ingredients. I’m already thinking of what I have in the house to try these recipes.❤

Casandra as always everything looks wonderful. I need to make cream of celery and my husband loves cream of mushroom. Your green stalks still look amazing. It is 113 today (new record) and I had to remove all the figs off my newly planted tree to save the tree. Hurt my heart. But there is always the fall. Texas Everbearing fig 2 seasons. Donna! Always good to see you lady. Thank you for the compliments on my GreenStalks. During the summer I keep them covered with insect covers and that really keeps my crops looking good. I've just loved growing my own celery in them. Goodness, its hotter than the surface of the sun where you are. You know how I feel about figs so I feel your pain. Haha, no way! You can totally do this! Maybe 1/2 the recipe first (make 2 pints instead of 4) but this is hard to mess up. You'll need to continuously whisk so that things don't clump, but you can always add more broth. Remember to keep the heat not higher than medium!

I guess I have already been doing a lot of this, since I found out I'm allergic to casein (and the high-priced vegan alternatives)! My "go-to" is onion and mushroom, cooked down with whole fat coconut milk instead of cream or half & half. My favorite is to get whatever fresh mushrooms I can on sale, slice them up and pop them in the dehydrator if I can't spend time to cook them down because otherwise, they turn for the worse quickly on me. My children never knew I used those dehydrated mushrooms in so much because I tend to powder a lot of the ones I dehydrate and add to meatloaf, casseroles, pasta sauces, and soups. Many times there are additives to foods i cant have but i can have basic ingredients like flour dairy etc so these recipes help me so much. I always make mine homemade at the time I need it for my dish it only takes about 15 min I glad to see more young people doing this

I would freeze them in 1cup silicone molds. Once frozen, I would pop them out and vacuum bag each cup in single bags and stack them in the freezer. I wouldn't trust those glass mason jars in the freezer. Plus, the frozen bags are much easier to stack and store.

You can actually also add instant potatoes as a thickener instead of flour when making a slurry or when you're making a soup that you want to thicken up

You can also use ghee aka clarified butter as a liquid or in place of butter.

Bone broth, herbs, potato starch to thicken, (used widely in Asian recipes; works well even for pudding) Celtic salt, possibly a fat like butter, chicken fat, or bacon fat.

I use goat cheese/milk for EVERYTHING, so have to make our own everything that’s dairy related! My son is allergic to cow dairy, and our other son super lactose intolerant (painful), and we LOVE GOAT everything. Try it, I’m sure you already have. People turn up their nose to “goat”, but man oh man it tastes just the best! I think how maybe even Jesus Christ had more goat dairy than cow, like most of the rest of the world. I even use it for making cake frostings. For us… I’ve shared with friends without telling them and they didn’t even notice. Love your channel, thank you girly ❤ “Maranatha”, God bless !

I saw you show yours on your video about vertical planting, and I would love your recipes !!! All of them please!!!! "Can't can because they contain dairy." Yet I have canned whole milk (store bought). Never mind. I just saw the comment about leaving out the dairy and canning in pint jars. I'll check that out some more. The milk I canned: Cold milk, cold pint jars, cold water in my electric canner. Set timer for 1 minute after venting and it's done. Tastes great and keeps well. Cream separates and is on top. Hardly ever makes it to the pot =) I'm gonna try this soon. Thank you.

Girl, I hope the jars of mushroom soup do not break when the soup freeses. I would have filled the jars a little less full if not using freezer jars. Love, love, LOVE your channel!

same, i make my own cream soups and freeze but i freeze with the lid off first to see how far it's going to expand, then add the lid. sometimes it erupts over the rim of the jar!

Why have I never thought of making this and freezing it!? We can’t eat cream of soups because of celiacs and I never feel like having to make this before I start another recipe, but keeping it in the freezer when I make it in advance is doable! Thanks

I am fortunate enough to have saved up for a freeze dryer. I think I will try these and then freeze dry to mix up whenever we need one. I'll keep you posted!--UGH so sorry--my kid messed with my name lol....

Hi Jackie 👋🏾! Condensed soups are an essential pantry item, and, as I admitted in the video I still purchase the tin cans, but it’s not as much as I used to buy because they really are quick and inexpensive to make and stock a few in the freezer. Hope you have a great weekend!

Help! Jars cracked (broke) during freezing. They were a name brand and had shoulders. I googled and found out that you should NOT add anything above the shoulder…the curve. PLEASE link or do a video about jar safety. They were in short supply after the pandemic. Love her enthusiasm❤️

Omg thank you so much for this information. I truly appreciate the knowledge I never thought about putting my fresh vegetable scraps in the refrigerator to make vegetable broth, I do this with chicken fat and store in the freezer but never thought about the vegetable. ❤❤❤❤
