Once hired a young man named Goldie 1 week fresh out the can. A couple weeks into him working I told him I was proud of how fast he was catching on and the dude broke down crying said no one ever told him they were proud of him. Everyone deserves a second chance. Wherever you are Goldie I hope you're kicking ass.

We had a review one time that said " food was wonderful, the building is beautiful and all the staff were very nice. However they all could have been mistaken for hardened criminal just released from prison." I still don't know how she came to that conclusion but..... she wasn't completely wrong. It takes tuff people to fight the WAR OF HUNGER!!!

At most you have a "kids, let me tell ya what your father/mother did once" experience. Practical knowledge is very important, that's why they have labs in physics classes.

That’s because they want to mistreat you and underpay you. Been working in kitchens a long time with no record and the worst ones I ever worked for had obvious criminals working for them. Bakeries are picky about who they hire and allot of them want you to have a degree. Sushi restaurants are even more picky and they’re looking for clean and polite people that can prove they know how to slice and roll properly. Those places were the best to work for for.

I didn’t get an interview or anything lol because they were really short staffed the day I turned up for a couple hours for a “trial” so I got dropped straight in the deep end with a 9 hour shift that went past midnight xD I got paid extra for it but when my boss’ most reliable staff member came back (basically his second and had been working for him for almost a decade before she left due to covid) she went off on him for hiring me without an interview or looking at my resume lmao. I’d already been working with him for three months at that point, and I’m a good worker so they weren’t going to fire me

That’s basically exactly how I got hired for my last job as a dishpig. “Can you chop this carrot like this?” “Good, you start in 5 minutes, wash your hands and just wash the fucking dishes” 2 weeks later and I was making all the deserts, entrées and prep for a 4 star restaurant. They only let me off because I was becoming too expensive to have unless I had to cover for the apprentice who did quite literally the same job as me.

@@klo1679 see you did all that and still wasn’t enough. From my knowledge and experience in different kitchens, it’s all the same. A good work ethic means you make some else’s job easier. Not to say you shouldn’t have it but be wary of who will use that as an advantage.

My brother being in jail for a year and prison for a little over a year with "gang" felonies, he mentions this to a higher class pizza shop, they start at 45$ for personal pizzas. He brings his own background report, (and mentions he's never made a pizza before) then they say "We don't need this, we don't usually do those, but we'll consider you" a few days later he gets the job, then he is trained to become the trainer for the whole district lol oh his convictions were for street graffiti but LA county considers graf crews to be gangs

Sometimes felons straight out of jail are the BEST workers because they are just grateful for the opportunity to restart their life. Honestly some of my best employees have been hires fresh from jail. Of course not sex offenders. We have minors that work at my restaurant and that's not something I'm willing to be flexible on. BUT there are plenty of factories in my area that hire sex offenders, and they get tax breaks from the government for doing so.

Sounds legit. Being overqualified is as much a thing as being underqualified. Overqualified means they will be out of there in a month or two and you're back to square one.

I agree I have seen that first hand on a few occasions. When a person is doing his/her best to improve their life and the alternative is going back to prison, they will give everything they got.

They take them in specifically of that, excons become employees for life. They struggle with other jobs and often need cash more than anyone. And there is another reason for hiring people with criminal past and while I won't say, a lot people who spent time in dining and catering will know.

I applied everywhere & got an interview for this delivery company to sort out parcels for full time & will also cover xmas period. They saw that i graduate w/ a biomed degree & their attitude changed & didnt hire me. I ended up working at Mcdonalds & that helped me get other jobs & i can handle stress a lot better

I'm a very quiet, polite, well-spoken, straight-laced, don't do drugs, don't drink, smoke a joint before bed, never been to jail, mind my own business kind of guy. After high school I started working in a restaurant as a dishwasher and then a line cook. I was definitely in the WRONG line of work, but it really helped me come out of my shell, and working with pissed-off junkies and ex-cons was a fucking masterclass in asserting myself and navigating social situations. Plus the attention from the front staff was a huge self-esteem booster, I probably wouldn't have dated if not for the constant validation the waitresses and hostesses gave. I also discovered that I love to cook, but on my own time and with my own recipe. Cooking for a busy restaurant isn't fun but cooking for friends or family is the most fun.

I wasn't trying to be rude towards you. Forgive me for assuming you had a shred of decency and cared about how you refer to people with legitimate diseases. And I'd argue that there are much worse things than "choosing to do drugs" (which is another whole conversation we could have). For example, being a butthole. Choosing to insult people that have suffered through something you've been lucky to never have dealt with. And there are plenty of things I could call a person like that. I used to work for a rental company that does high-end weddings. That was one of the questions that was asked was have you ever been to jail? One dude answered no and my boss man said well we're not going to hire you cuz everyone here has gone to jail at least once. The poor fella look disappointed. He got hired anyway. 😂

The other day my KM comes to back super excited and is like “guys… we got a new hire… he’s from JWU, he’s trying to work full time, no criminal record and isn’t addicted to drugs! This has to be too good to be true” And it was too good to be true. He then doesn’t show up his first day

That is hilarious. In my kitchen had a young kid with the sweetest and goofiest way about him. He had the meanest scar running down one side of his face. He was drinking and used a bottle of Jack Daniel's as a pillow. That was the nicest of the group.

Worked as a laborer for a pipefitter once and was told to come the first day, ready to work. Showed up and he shook my hand, goes "You an alcoholic?" "No." "You a junkie?" "You call in sick alot?" "Nope" "Eh. You aint gonna fit in then. Welcome aboard, glad to have you" Lol it was a good job, bad pay, no benefits. But he was 100% right. All the other guys were either drunk, high, or absent.

When I was new working at this burger bar restaurant, I was introducing myself to the head chef as I was recently employed as a waiter. I mentioned I wanted to be a chef when I was younger and he had a good laugh cause I fully get it, extreme/intense work environment, long hours, average pay and a job that you need to get perfect which will stress you out. But it was all g, at least I can cook at home lol.

I once worked with a Polish executive chef who is an absolute amazing guy. However he was a tiny bit homophobic, racist, addicted to cocaine and alcohol, used to be in a gang and spend a while in jail after killing someone. In general an amazing nice guy who really changed his life around. But he definitely still had some issues I couldn't fully support

Better yet just become the dish washer and work your way to head chef and kitchen manager. Every time someone flakes your fill-in and slowly climb the ladder. But on the plus side you get a head chef that actually appreciates his dishwasher and understands all process breaks down if he isn’t doing his job well. What I really wanted to do was start all the servers there so they have the same appreciation. Only for about a week or so.

My innocent little self... Lol. My first (only) restaurant job, I started as a prep. My first day actually in the kitchen, my trainer and another employee got into a discussion how the one person was lucky to get into the jail they did because its much better than another jail they went to. I'm standing there washing veggies, eyebrows lost into my hair net, eyes bulging out of my head, clamping down on my tongue nearly drawing blood. I, in my naivete, was shook, lol. But lots of awesome ppl worked there that had "a past".

Accurate. And I live like 15 min away from Jwu, they would alway come in thinking they knew how to run an entire restaurant. They learned really fast that they spent a whole bunch of money for nothing. The worst one was a new hire for bar manager. Went to Jwu for business management. That's actually great, their business classes are actually really useful for that part of the industry. Did his paperwork just fine, screwed the pooch on ordering, every damned week. And then also tried to flex his Jwu degree in the kitchen, when he had never even set foot in the Jwu cafeteria.

Can confirm; all the restaurants I've worked at in 12 years avoid people with culinary school degrees. While the knowledge is great they do not teach practical cooking skills used in restaurants (or really anything useful to be a line cook tbh) and usually (not always) those people with degrees think they know everything and are actually shit in real kitchens because the pace and atmosphere is entirely different.
