The idea is good, just one more step, preserve the good food to be donated instead of just going in the bin. It can monitor and donate at the same time.

I thought is something that would stop food waste problem... but apparently is a food disposal monitoring system, just to monitor how much food have been dispose !!!

Which is not a bad idea. In a busy kitchen especially with labour cost being one of the integral factors when running a business. Do you think you want to pay someone to monitor food waste? From my experience, as with most others especially if your the closing kitchen team, once you finish doing any mise en place, food prep and service, you want to clean up and go home. You do not want to stay any longer unless your working into the graveyard kitchen shift which is another matter to discuss. Serving customers during service is already time consuming because you need to be efficient and be mentally focus to do the job right like having the proper amounts of ingredients on line so you don't have to run to the walk-in cooler too much. It's a good technology to have in Hotel restaurants and any buffet, mass-produce, establishments to keep costs under control since the food cost itself is getting a bit "higher" here in Canada, just for example because of a certain "carbon tax." 3 years ago a bundle of Green onions would cost about 0.50 cents each, today they can go as much as $1.50+. That is more than 300% of it's value. Keep in mind that most kitchens run under a budget which can sound ridiculous but it's there. When I worked at Marriott, the accounting division gave me about $10k to $15k to work with in the kitchen. If you use about 70% of the budget, this value can change per establishment, they will be happy. When you use 90-100% of that budget the executives and accounting will be having meetings to discuss why this factor, could be food waste or something similar, did not work. You got to talk to them about it and worst case scenario you have to cheapen the production, which I personally don't like to do. Just some food for thought.

@@eugeneenriquez2691 I agree to what you, in a business stand point it does help you save some money from not waste as much food as you can, but the main title of this video or product is about food waste problem, which i perceive this video title as a environmental stand point. I basically can achieve the same result just from set up a camera and use different bin for different type of foods and a weighting scale.

Well, i mean something that may appear simple may have a giant impact on the world.. i mean, just look at seatbelts, they may seem simple, a strap to hold you down in case of a car crash But just imagine if noone had invented it :/

@@sohaidong You're not thinking through when u suggest u can achieve the same monitoring results by setting up a camera and having different bin for different types of food + weighing scale. Because if you're gonna manually weigh the food, then what use will the camera do when all it does is to monitor u weighing it haha. The best part about the product in the video is that it can be simply placed on top of any bins and the system helps u recognize the different types of food and its mass, and collate the information for you based on different times of the day/week/year. Which allows you to spot certain trends or patterns throughout the day/week/year that arise from promotions, seasons, festivals etc. You can constantly make adjustment to your purchases according to the trends observed, no need for extra manpower to weigh and collate info, neither does it takes up any extra space (more bins takes up space, space = money), and you don't have to educate your cleaners on how to differentiate the food apart, and it's not subjected to human error or the employee's behavior (reluctance/laziness/carelessness/meticulousness). Though the system can only recognize up to 90% correct now (3yrs ago), as they better the system, the percentage will increase. It's a one-off solution, that's fuss free. I would say, if you're a restaurant owner looking for a fuss free solution to cut costs, then this does the job. If you're a more hands on person, you can weigh it yourself or find someone meticulous u help you do it to collect information. Many good technology starts small and simple.

he said lastly that it wont help people struggling to acquire food, then why mention it multiple times throughout this video? The premise is not in line with the solution. he should have just said that it would help restaurant know how much food they really need to buy.

Well the title says "deal with food waste." Not deal with hunger. Hopefully there will be a system that could connect hunger and food waste issues and tackle them together someday. This video isn't about that.

If you are doing a business, every cent counts. Every drop of cooking oil counts. Every minute the electricity is on, counts. Every drop of water used to making drinking water counts. When you innovate something, don't think that the other end is not thinking what you are thinking. The way you think must be different. Everyone thinks. Almost everyone has the same idea. But you have to manipulate the idea to suit the current and new situation.

The speed of cooking a limited amount of food each time. Meaning once the food is finishing and there are hundred of hungry stomachs still around, your cooks have to cook at top speed. A hungry stomach is an angry person.

The editing of the video could have been better to match the problem he spoke of (hunger) to the solution (stop food waste). I don't think there is a direct connection between the two, but the problem sparked his creativity to apply A.I. to this problem. Food waste is huge and disgusting. So what if this solution helps companies save money? It can help prevent waste and increase profits - win win for mother earth and companies (which will in turn make companies even more receptive to this). Can the machine be improved? Yes but good start!

It’s not a problem in the first place. Food is just a very good biodegradable money generator. People who struggle for food and people who can afford food are 2 separate issues. It’s a commodity that stimulates the economy and create wealth and jobs. Farmers who can’t get rid of their excess crops are not gonna ship it to 3rd world countries for free, they are just gonna burn it so that the prices can maintain. If all hotels and f&b increase their food supplies by 1000% , it’s a very positive sign. Business are expanding, more monies are circulating. Good for the farmers, for the food factories, for everyone. Because more money is generated out of these biodegradable commodities which is food. Dont kill the money generator. The more merrier.

While I agree that those are different issues, I do not agree that wastage is the way to stimulate the economy. Wastage to keep them producing is in fact a subsidy to food producers. When there is less farm produce consumption, the supply will adjust by attrition, and they find something else to do.

You don't have to give it way to the 3world countries..but they can also organize together with others farmers a food market whereby they sale under the price likes wholesale do..but trow or burn it away this is a waste for all the hard work and the soil the used.

@@Singahlang They don't see it as a wastage. They see it as one of the ways of making money, of balancing the economy This happens in rich countries. In poor countries, nobody will burn their extra crops. It is difficulty enough to be a poor farmer in a poor country. They will not burn their crops. In fact, they will innovate and turn the crops into a money making something and not as food. The rice is for eating. The padi husks can be used as fertilizers. If there is any rich dude who wants to do more research on the padi husks, may be he will invent something so useful out of it and in the end, make himself richer.

Hi cna itll be interesting if you guys did a video on tampines hub's food waste digester. They turn food waste into fertiliser for their garden on level 5 and they also give away the fertilisers and vegetables on a particular month. Info can be found on their website!

As a buffet eater, I only take small portions and just go back If I want more. Some people just are so greedy, they tend to get more and when they don’t like it or finish it then they leave it there.

@@asmdesign1956 If he does successfully sell his innovative piece, somebody else can innovate on it. Put another feature; that of recycle. Recycle the food. Most can eat overnight food. Price the recycled food cheaper and tell people it's recycled food or overnight food.

Not necessary if you don't support him. It is not easy if you want to sell your product. Because you have to compete with a lot better innovative ideas. But what is your idea of making food money worthy ?

But what if sometimes the fault is on the customer's side? I've been to buffets before and I see people getting way too much food that they can't even finish. No matter how much more or less the buffets at the hotel produce it's really on the customer's side to be more moderate. So I'm not too sure if consumers are being greedy by nature and how the dining rules are set up, how will this machine help make a difference?

Experience will tell you to take only a little when you make that first round. You test taste first. Which is the tasty one ? Then for round two, you get the tasty ones. Don't get a mountain-full. Just get enough. If you are still greedy, take some more but again, not a mountain-full. You are not starving. And the food is forever there, forever mountain-full. So go for a few rounds. Until you feel you are really full. That way you don't have to feel guilty leaving the table and your plate still contains a mountain-full of food.

The best way is to ban buffets. It is totally a waste of money and caters to a small number of people and requires a colossal waste of food.

@@usucktoo Buffet is for those who know how to eat until they exceed the amount. If your buffet is 100 in your currency, make sure you eat past that 100 to make it worthwhile. If you eat only 20, your lose 80. You might as well look for an ala carte meal of 20. But some people love the environment. The price tag is not just the food, it is also the air cond, the service, the nice surroundings and all else.

@@nwxzzz The management would have already calculated the cost for each and every vegetable, meat, dessert, drink. They know how to profit from a buffet. The management has a sort of menu. Like for 500 your currency, what food and how much it is and for how many stomachs. For 1000 your currency, what is in the package. If you want to change the food or drink, they will do the changing without affecting the calculated cost.

Buffet means exactly what it means. Much food. Unless the restaurant has a menu. A budget menu. So you know your budget buffet will be budgeted. Don't overfill. You friend will not have anything to eat. Or no chicken wing to eat. Only the leftovers.

i don't understand the use of this tech when there are servers that are prevalent in the restaurants or hotels that could weigh the waste and right it up somewhere. average it at the inventory or what. I doubt that the owners would spend money for a device like this. Sorry to be so negative on the device.

The hotel management should be expert in dealing with the amount of food. As well as management of other sorts that have been through various experiences and so they will know how much is too much and how much is too few.

I would rather just weigh the food on a weighing scale and note it down before sending it out to the food bank. This way I'll know the excess cooked. I like the video though. I will try this technique out. It will help me earn better. 👍

This does not solve food waste problem. The finance student cannot have made the electronics and mechanical parts of the product . There is nothing great about this product. The kitchen staff should easily be able to tell how much of what is thrown away daily. There is no need for this overhyped product. AI so what? It's all made possible by humans manually tagging what a photo represents what kind of food. This is also inaccurate as in real world the waste will not be dumped into the bin in such a clean and uniform manner. It will be like rojak and full of saliva and vomited stuff and this is what the machine cannot tell. This guy is he son of a VIP to get such coverage ? Did he made the electronics and engineering stuff himself? Finance person? Gimme me a fking break!

There was a time when uneaten food is weighed and the customer has to pay the fine for the uneaten food. Well, if his product sells, he will do his country proud plus the citizens too. If his product has no support, then in the name of innovation, he has to re-innovate again and again and again. There is no ending if he has the passion for it.

@@Schocam He is not the real inventor in my view. A finance grad with no engineering cannot have developed it by himself. Real inventor is the one who thought of the actual engineering mechanism and made it work. He is most likely someone who had the idea and asked engineers to make it happen. This is not considered his invention if what I described is the case. It is possible for a finance guy to also have engineering expertise but very rare. If it happened in the west, it's not surprising. But he is from a little Asian country where creativity is known to have been stiffled. Most researchers come from overseas. Invited here

@@Schocam Yes! sending the scraps to farms, expanding more farms vertically and increasing yield, decreasing pesticide and herbicide use because of greater yields. Creating connected networks of food banks, community farms and outreach to impoverished communities. you want to weigh waste? get a kitchen scale.
