I certainly understand your frustration with cooking on the road. The small area, using only 1 pot at a time, limited water, and the time crutch brings me anxiety, especially being super busy. I'm trying to carve out time, relax more and cook with love, rather than a rushed chore. It's worth it, especially when he's working so hard and you enjoy the meal together. You are a lucky man you found a trucker wife. I think the hardest think when your a trucker is when yo have a spouse that's not in or interested in the industry and isn't willing to understand the in's and out's of it all.
