Ingredients:
1 eggplant
1 egg
3 tbsp of wheat flour
250 g (9 oz) of ricotta cheese
1 clove of garlic
Half cup of tomato puree
40 g (1,4 oz) of parmesan
8 basil leaves
Salt, pepper
Olive oil

I am gluten free love eggplant parm but with out all the frying & bread crumbs. My creation last week was diced eggplant & tomatoes roasted tossed in oil with chopped garlic. I make oat flour so sprinkled that in grease muffin tins scoop the seasoned eggplant with oregano and S& P with parm cheese into the oat crumb cup sprinkled more oat flaked flour on top. Rustic and delicious. This is more muffin like with flour & egg. But delicious!

Baked 350F 20 minutes cover with tin take off 5 minutes add parm Or mozzarella to top finish baking
