Your Handi gravy is my go to base for all my curries. I make it in huge batches. I’m definitely going to try this recipe as it looks amazing and Chana Masala appeals to a broad range of eaters. May have a challenge in sourcing yellow chilli powder but I have everything else. Will post a pic of my efforts.

Sanjyot, aapke saare recipes bahut sahi hoti hein. Aap effort leke jo tips aur tricks batate hein, nausikhe cooks keliye bahut important aur useful hein. Thank you! Bas ek technique mujhe lagata hein ki aap ko aur sikhana chahiye. Sabke pressure cookers alag hote hein. Kahi baar instapot jaise electric pressure cooker bhi gharon mein istamal hote hei. Ye "5 seeti tak cook karo" etc instructions accurate nahi hoti. Actually pressure cooker mein seeti lana bilkul jaroori nahi hota. Issase lpg gas bhi jyada lagata hein. Pressure aane taak medium flame aur uske baad low flame per 15 mins will cook normal arhar ya chane ki daal perfectly. Chicken, mutton ya chole, rajma keliye ye 15 mins se 30 mins is enough. May be you can try this technique and give instruction accordingly which can be replicated on almost all types of pressure cookers. Best wishes!

Carom seeds are labelled ’ajwain’ or sometimes ajuwan in California where I live. The tiny seeds look kind of like celery seed but the flavour is stronger and more herbal. I had a hard time learning that a small pinch goes a long way! That pinch adds depth to many dishes. Even here Ajwain in the Indian groceries isn’t as good some times as others but it’s easy to grow. It’s is a quick-flowering frost -tender perennial so you can grow it as an annual. It hasn’t been invasive for me even though it’s one of the plants called Bishop’s Weed.
