Ingredients: 1/2 tsp roasted Cumin powder 1 tsp red chilli powder 1/2 tsp kashmiri lal mirch 1 tsp coriander powder 1/2 tsp black rock salt 1.5 tsp salt add hot water and wait for 5 minutes Boil Black Channa + 2 potato 1 cup Black Channa ( but by seeing the size, I think he might have used 2 cups) 1 Bay leaf 1 Big Elaichi 2 TBSP Oil 1tsp - Jeera slight Hing 1-inch ginger paste 1 tbsp Kasuri Methi 1 tbsp chaat masala Assemble: Add Channa add boiled and cut potato chopped Onion -1 chopped Cucumber - 1 chopped tomato - 1 chopped chilli - 1 Lemon Juice - 1

From Atlanta - love your recipes, but ... some suggestions and hacks for this one I adore your recipes but some of the preparation "steps" are over the top for those who are time constrained. Here are some of my observations, open questions, and variations for simplification. - the science behind the cooking process is incredibly commendable. I made the mistake of adding salt and it took an enormous amount of time to boil the kala chana. Kudos! - all ingredients mentioned are spot on, though I have a couple of reservations on the garnishing, mentioned later. - the kala namak (black salt) is extremely important for flavor - now for the spicy sauce, do we really need to roast the ground jira (cumin) first? I think quick folks can avoid this step and would do well with regular unroasted ground jira from the shop - there's plenty of heating and roasting later anyway - so just get on with it - also, for the time constrained folks, you can as well use a bottled red chilli chutney from the market of your liking - I found Deep brand chilli chutney in the US is a good flavor of my liking - or use your own green chutney perhaps, substitutes which will reduce your work - ice cooling the onion chop, phenomenal, made a big difference - on adding potatoes, it's not a must - diabetes conscious folks can avoid, but to get the starchy bump (if they must) they can substitute red potatoes or yams which have a lower glycemic index - on garnishing, this is where I'm at a loss why chopped dhuniya (cilantro), a universally addon in Indian cooking was discouraged, while pudina (fresh mint leaves) was not included, the latter being a foremost ingredient in kala chana chaats. Again, many thanks to your channel.
