Full written recipe for Kolhapuri misal pav `
Things to remember:
Start by first boiling the sprouted matki as that water will be used to make missal we require the stock and we’ll make that by boiling the sprouted matki.
Prep time : 30 - 35 Minutes
Cooking time : 45 - 50 Minutes
Serves : 8 - 10
Wet vatan
Ingredients:
Oil 1-2 tbsp
Jeera - 1 tbsp
Shah jeera - 1 TSP
Coriander - 1 TBSP
DALCHINI - 1/2 inch
Hari elaichi - 2 nos.
Badi elaichi - 1 no.
Black peppercorns - 1 TSP
Cloves - 3-4 nos.
Ginger - 1/2 inch
Garlic - 10 -12 cloves
White Sesame - 1 TBSP
Poppy seeds - 1 TBSP
Onions- 2 Mediums Sized (with skin)
Dry coconut - 1/2 no.
Fresh coconut 1/4th cup (grated)
For cooking the matki
Ingredients:
Sprouted moth 3 cups
Haldi powder - 1/4 TSP
SALT to taste
Water - 1.5 - 2 litres
Tarri / Kat
Ingredients:
Oil ½ cup
Onions 1 big size (chopped)
Kanda Lehsun masala 3 - 4 tbsp
Kashmiri red chilli powder 1.5 tbsp
Turmeric powder ½ tsp
Prepared vatan
Salt to taste
Matkichi ussad:
Ingredients:
Oil 1 tbsp
Mustard seeds 1 tsp
Green chillies 1-2 nos. (chopped)
Cooked moth
Turmeric powder ½ tsp
Kashmiri red chilli powder 1 tsp
Kanda Lehsun masala 1 tbsp
Salt to taste
Fresh coriander a handful (chopped)
Batayachi bhaji
Ingredients:
Oil 1 tbsp
Cumin seeds 1/2 tsp
Mustard seeds 1/2 TSP
Greens chillies 1-2 nos. CHOPPED
Curry leaves 10-12 leaves
Onions 1 medium sized
Boiled potatoes 5-6 medium sized
Turmeric powder ¼ tsp
Salt to taste
Fresh coriander handful (chopped)
Assembly:
Batatyachi bhaji
Matkichi ussad
Farsan
Tarri
Kat
Coriander
Onion
Lemon
Pav
Chaas

@@YourFoodLab Kudos for actually working to learn the proper pronounciation. Here is a better idea for the onions and coconut, instead of cooking them on flame, cook them in ash on the edge of a wood fire. It yields a much superior roasted onion. The hot ash slowly and steadily cooks it and there is no danger of burning it. Try it in Holi. Roasted onion by itself becomes a delicacy.

" in local Kolhapuri dialect ) As a proud resident of Kolhapur, I can say that the recipe, the descriptions, the preparation, the marathi pronunciation, everything was absolutely spot on. Had a big smile on my face watching this and every video that you put out. A big thank you to you and the entire team (the production value and technical details are just insane). In pune you get "masalya cha dabba khali padla - sagle masale mix zaale - aata tyat pani taka ani tyala misal mhana" in Katakir. Fking over advertised and hyped trash misal - didn't even have matki in it! Yes, I searched for it - not a single dana!

I'm from kolhapur and eating misal from childhood....You shared right recipe of kolhapuri Misal..even u mentioned using 'Paav' instead of 'Bread' which is exactly right ..In kolhapur we use bread slices...10/10 for recipe...keep it up

I from Karnataka with border attached to Maharashtra. Authentic Misal Pav is something I crave for. Whenever I crossover to Maharashtra, one of the must try dish is Misal Pav. Man!!! I am in UK and was looking for typical misal and I searched all the marathi channels and there you go with exact misal I was expecting 🥺♥♥♥ I am craving for MISAL every Sunday I used to go BHADAIT MISAL Pune and now here I am eating frozen food. Between the elaborate recipe for the Kanda Lehsun masala and this one is like having a revelation. As a chef I can appreciate precise and involved recipes. As a Kiwi who knows relatively little of authentic Indian cuisine, I appreciate the way that you teach us how to make recipes such as this. This is Art. So many layers. Amazing authentic recepie. Love from pune Maharashtra. Hats off for ur efforts. U presented it in hindi in real marathi style. Use of word Vatan just touched the hearts of all marathis. It was emotional to see this video. Guys who r not from MH, don't fear of it's killing red colour just make it the same way as sanjyot told lemon at the end will kill most of the spicyness & buttermilk & raw onion coriander salad + dipped farsan reduces all the excess spicyness at the end. And the most helpful could be a buttermilk drink with it. Do give it a try .

Hiii sir as a KOLHAPUR kar I nkow this mean a lot for us. I know that our city has lot of special food Verit's but as well as KOLHAPUR is much under rated city of Maharashtra also we have famos WADA PAV , TAMBADA PANDHARA RASSA, PITHAL BHAKARI , DHAHI KHARADA and lot of stuff like that but MISAL is one of the most favourite.well appreciated it's looking झंझनित* and love your vedios keep going👍

This was the first ever video i watched on YFL. I come from a Marathi household and i was stunned to realise Sanjyot is not a Maharastrian, especially after he nailed all the pronunciations. (Zanzanit, misal, batatya, usal). He nailed all the ळ ल ण न pronunciations. Today i tried the YFL misal recipie for the first time and my mom said it was the best misal ever made at home. Thanks a lot Sanjyot. Lots of Love. Please keep posting new recipies, which I'm sure we viewers will be eager to try.

This is perfect Misal Recipe even Maharashtrian won't always be doing this in such a authentic way because it's a very cumbersome process. Only thing and imp I guess you forgot to say is about "Farshan": it should be namkeen only not the spicy one and I also add roasted poha chiwda in it for extra crunchiness. Rest as usual ur recipes and style of presenting is awesome. 👌
