I love that you just left out the noodles completely! It looks delicious - I do like it with the "egg noodles" - but zucchini is usually too wet and eggplant it a different flavor profile - even though it is good. I immediatly though I'm going to add sausage - then CJ made his comment and the aggressively seasoned ricotta solved that! Thank you for another one to try.

Brilliant idea on this to accommodate most everyone! It would be a good casserole to take to people recovering from illness and give a box of spaghetti noodles along with and garlic bread- for the kids and a nice tossed salad. Just about everyone I know is on low carb/keto (at least over the age of 30). I bet this would freeze excellent for batch cooking for us singles! Thank you guys for all of your hard work 😃

Hi Sara, This was delicious. I made mine with mild Italian sausage. It was even better the next day for lunch. My sister and I have been keto for a few years now and do not crave carbs anymore.
