Ingredients
Eggplant/ बैंगन -1/2kg
Roasted Peanuts/ भुनी हुई मूंगफली -1/2cup
Roasted sesame seeds/भुने हुए तिल -1tbsp
Coconut powder/ नारियल पाउडर -1/4cup
Green chillies/ हरी मिर्च -2-3
Turmeric powder/ हल्दी पाउडर -1/2tsp
Kashmiri Red chilli powder/कश्मीरी लाल मिर्च पाउडर -1tsp
Roasted cumin and coriander seeds/ भुना जीरा और धनिया बीज -1tbsp
Dry mango powder/ आमचूर -1tbsp
Salt/ नमक -as required
Coriander powder /धनिया पाउडर -1tbsp
Mustard oil/ सरसों का तेल -1tsp
To make gravy
Oil/ तेल -as required
Cumin/जीरा -1tsp
asafoetida/हींग-1/4tsp
bayleaf/तेज़पत्ता-1-2
Onion/ प्याज -2
Ginger garlic paste/अदरक लहसुन पेस्ट -1tbsp
Tomato/ टमाटर -1/2cup
Salt/ नमक -as required
Red chilli/लाल मिर्च-1/2tsp
turmeric /हल्दी -1/4tsp
garam masala powder/ गरम मसाला पाउडर -1/4tsp
Potato/ आलू -2
Water - as required consistency
Coriander leaves for garnishing
Method
In a blender grind roasted peanuts,roasted sesame seeds, coconut powder, green chillies, turmeric powder, Kashmiri red chilli powder,roasted cumin and coriander,dry mango powder, Coriander powder,salt & Mustard oil fill this stuffing in eggplant.
In a pan heat oil add asafoetida, cumin and bayleaf let it crackle then add onion and saute it until golden then add goger Garlic paste saute until raw smell goes away.
Add tomato and salt let cook until it starts releasing oil then add red chilli powder, turmeric powder, garam masala powder and leftover prepared masala mix cook it for about 2-3 min
Then add potatoes cook again for about 2 min then add stuffed eggplant mix well now add water cover and cook it for about 5 -7 min on low flame then garnish with fresh coriander leaves and enjoy.
