Alcapurrias de Yuca!
Crispy, delicious classic alcapurrias! These will bring you back to the kiosks all around Puerto Rico with the first bite. 🇵🇷 🤤
Alcapurrias de Yuca
Ingredients:
2 lbs. Fresh or frozen grated yuca
½ C Annatto (Achiote oil)
2 tsp salt
1 tsp Paprika
½ t Cumin
1 t Black pepper
1 t Garlic granulated
¼ C Coconut milk
2 C ground beef prepared
Instructions:
For Masa:
1- With a strainer, strain the liquid from the grated yuca.
2- Put the drained yuca in a bowl, season with salt, pepper, cumin, garlic and paprika.
3- Add coconut milk and annatto oil, mix until everything is incorporated.
4- Test the masa by frying a small piece, adjust seasonings to your liking if needed.
For Alcapurrias:
1- Place preferred amount of alcapurria masa on parchment paper, wax paper or plantain leaf and spread evenly.
2- Place preferred amount of meat in the middle of masa.
3- Bring bottom of the paper to the top, making a cylinder.
4- Make sure masa surrounds meat.
5- Roll into the fryer with the parchment paper (watch video for demonstration).
6- Fry over medium high heat until golden and crispy.
7- Serve and enjoy with your favorite sauce! We like mayuketchup or fry sauce.
