Ingredients #1:
4 corn
2 tbsp butter
¼ tsp lime zest
Lime juice (a few drops)
¼ tsp garlic
½ tsp red chilli
¼ tsp salt
Cotija cheese (optional)
Spicy mayo (optional)
Coriander (optional)
Instructions #1:
1. In a pan, boil corn for 4 minutes.
2. Use a bread knife to cut the corn in half (vertically) into 4 pieces.
3. In a bowl, melt butter, grate lime zest and add a few drops of lime juice.
4. Next, grate garlic into the bowl, add red chilli powder and salt - adjust seasoning.
5. Then, use a pastry brush to spread the mixture over the sweetcorn pieces.
6. Place the sweetcorn onto a BBQ for 30-40 seconds (remember to flip sides).
7. After 30-40 seconds, sprinkle cotija cheese and coriander over the sweetcorn, and add spicy mayo.
8. Ready to enjoy!
Ingredients #2:
1 cup corn (boiled for 4 minutes)
2 tbsp butter
¼ tsp red chilli
½ tsp chaat masala
1 tsp lime juice
Instructions #2:
1. Use a knife to take the corn pieces off and collect them into a bowl.
2. In a pan, melt butter and add the sweetcorn into it - stir together well.
3. Add red chilli powder, chaat masala, lime juice; mix well and add salt for taste.
4. Done!
