Oh, your water should be on a rolling boil. Cook for 2-3mins.

Great video Dr Leslie . I like the Mani Chye and the ikan bilis . Btw , I used to think that all ikan bilis were the same until I visited a huge dried seafood shop in Kuantan. They had different grades of ikan bilis and the taste was different as well. Look forward to your next video on taking hawker food and making it fancy

As a Hokkien Malaysian, this dish is more or less represents my childhood and easily made on demand. Your recipe is excellent and perhaps, one of the best that I know of but your food carbon footprint sucks. I am currently living in Ireland and could only get those ingredients in my dreams. Any thoughts of a bastardized version ? While watching you eating, my saliva is running riot, threatening to dribble onto my chin. Thanks for sharing.

Haha, yes, SFA can sometimes be such a pain. We can’t get so many ingredients here, like fresh goose. But on the flip side, we can be assured of the safety of our food.

Yes you can! This is to remove the myoglobin which can sometimes have a off flavour if the meat is not fresh

It just goes well with the mee Hoon kueh. You can use other veggies like shanghai greens and chye sim.

@@LeslieTay taste so good. I just use very basic ingredients and my dad actually ask for 2nd bowl. Mum also ask for more soup n both ask me to cook more soup next time. But I think my kueh not so nice cos both parents request for ban mian noodles next time. Really love this keuh n soup myself. I will definitely make more of this cos I really love soup noodles.

Very interesting use of ingredients, I wash the manicai thrice, then I tear and crush. Your pork stock really something, normally at home too lazy no broth. Lorong Ah Soo got a Wanton Mee stall that sells Mee Hoon Kueh, their ikan bilis broth really good, if you eat wanton mee they give you the soup.
