Swahili Pilau My Way - A Burst of East African Flavors
Pilau (or pulao) is a must-try dish in East Africa, passionately prepared in Kenya, Tanzania, Zanzibar, the Comoros, and beyond. With influences from Arab and Indian cuisines, it’s often served at weddings, religious celebrations, and large family gatherings. Each region adds its own twist, and today I’m sharing my personal take on this iconic dish.
Ingredients:
1.5 kg basmati rice, thoroughly washed and soaked for 30 minutes
350 g finely sliced onions
1 tbsp garlic and ginger paste
80 g pilau spices (click the link below to see the exact spice mix)
Pilau Spice Mix
1 kg potatoes, peeled and halved
Salt to taste
2 to 2.25 liters of water (adjust depending on your preferred rice texture)
2 tbsp ghee
For cooking the meat:
1.5 kg meat (beef or other)
½ tbsp garam masala
3 bay leaves
½ tbsp garlic and ginger paste
Salt to taste
Enough water to cook the meat until tender
