Hello friends, in today's video, taking advantage of the fact that it is the season for green zucchini, I am going to show you a different way to use them: I will show you how I prepare them in escabeche. This is a special recipe to have in the refrigerator, perfect for a snack when hunger sets in or to accompany meats. It is an economical recipe with few ingredients. I hope you are encouraged to prepare it and remember that escabeches have a proportion of 2 parts oil to one part vinegar.

Ingredients:
4 medium zucchini.
1 onion.
1/2 red bell pepper.
2 slices of lemon.
3 cloves of garlic.
1 glass of oil (I'm using sunflower oil).
1/2 glass of vinegar.
Salt, oregano, black peppercorns, 2 bay leaves.
