Zarda Pulav
Ingredients
Basmati rice 1 cup
Sugar 1 cup
Milk ½ cup
Ghee 2 tblsp
Tejpatta 2 leaf
Cinnamon 1 inch piece
Cardamom 3 no.s
Lavang 3-4 no.s
Kesari ½ tsp
Salt 1 tsp
Procedure
Wash Basmati rice and Soak in water for half an hour.
Soak Kesar strings in ½ cup water.
Boil water for cooking the rice. When the water starts boiling add salt.
Add whole spice, like Cardamom, lavang, tejpatta and cinnamon.
Add Kesar water. Now add rice and cook for 5 - 10 .minutes.
When the rice is 90 percent cooked, strain it in strainer and keep aside.
Take a another pan and add two tbls pure ghee.
Fry all the dry fruits for a few minutes.
Remove half and keep in a plate.
Add one cup sugar and half a cup of milk into the pan. Cook the sugar for a few minutes till it boils and check if the sugar has melted completely.
Add rice and mix softly. Add the dry fruits on the top and close and cook for five minutes.
When the water has all dried, keep a tava on the flame and on that keep the Zarda pan to give dum for ten minutes.
Turn off the flame and again keep for 5-10 minutes before serving.
Zarda Pulav is ready.
