Presumably if someone is removed from a custom view the cadence ceases? I guess this works for nurture sequences that you want to terminate on, for example, a record status change.

There is a setting in the cadence where you can specify the un-enroll criteria. Being removed from the custom view is one of the options.

Does SMS integrate with cadences or is e-mail the only option? (preset sms message)

Right now the functionality only works with Calls, Tasks, and Emails. Hopefully they will add SMS in an upcoming release.

Can you cancel a scheduled action? Any way to rename follow-up 1-5 steps and maybe add additional ones?

You can manually un-enroll a record from the Cadence and that will cancel any upcoming actions. It doesn't appear that you can rename the steps but it does continue to add additional steps when you populate the first 5.
