Wow! This is the most ingenious method - baking and rolling the sponge with the mat... I've always been put off making a Swiss roll because of the baking-sheet method... removing from the tin, rolling in a towel or parchment paper etc. Your method makes perfect sense. At what temperature do you bake the sponge? Do you place it in the fridge the first time you roll it up, or do you just leave it to cool at room temperature? Thank you🤗

Thank you 😊 I was also always a bit struggling with the swiss roll before, but since I use the baking mats it is so simple. I put it into the fridge while I prepare the inner part, so not that long actually, about half an hour maybe, but you can keep it in longer. For baking I have configured 180 degrees Celsius, which is about 350 Fahrenheit. Have fun with trying out 😊
