Hey, thanks! :) So, I know I can answer one of those questions with certainty. The flute and "Hmm" chanting were both from a soundfont called Africa. I got it from a site called sf2midi. As for the second question: I hadn't actually set out to base the song around any particular scale. This song was almost a 'cart-before-the-horse' experiment. I started playing, and just waited to see where it took me.

I like, I hear a lot of sound fonts I use. The chanting and Asian flute specifically. Where did you get these? Also, did you try to use pentatonic scales? West African music (Hollywood African music) is usually liberal with mallet percussion and pentatonic scales.
