Just made this. It was great thanks. My wife said it was better than local takeaways. I think when you freshly fry the chicken it tuens out better than takeaways that probably prefry it first then reheat.

I just made this! This is my first ever attempt making something from your channel. The entire time it's been cooking and also whilst eating it I have been repeating to myself, "oh my god" - it actually looks and tastes and is the real deal holyfield! Some schoolgirl errors slicing the breast and also deciding to do singpore noodles at the same time (2 tabs open). Too much MSG on the onions in the sauce meant it looked kind of brown. My kitchen is obliterated but my belly is smiling. Woo hoo! Thank you! ✊

Another great looking recipe I can't wait to try. I have bought many DVDs cookery books celebrity woks cleavers etc and given up because i never cooked anything that tasted close to takeaway food or even anything worth eating so i got rid of all the woks and books. After watching your egg fried rice recipe I went to a local bargain store for one last attempt at Chinese cooking I bought a £4 wok some blue dragon egg noodle for 59p dark soy and light soy sauce just to try, my first egg fried rice beat my local takeaways boiled rice with a bit of egg and a few peas for taste hands down and the plain Chow mein was absolutely delicious. I am also an msg convert it adds a great savoury taste. Thank you so much Choo and Chin. How about chop suey ( I know it was made for us Brits but I still like it)

I prefer the breaded to the battered one so I usually make it with panko breadcrumbs and deep fry like katsu, but I'll have to try the batter with the custard powder. The egg thing is really interesting, I've definitely had that happen before. I usually put some custard powder in the sauce too. And I'm sure takeways don't do it but you should use the lemon zest too! You can get a really lemony flavour without all the sourness.

Love the batter it's so crispy , I prefer orange chicken so I actually adapted this and swapped everything lemony out for an orange equivalen with your measurements! Turned out great and now I have some Msg to use in other recipes

Hey Chin - it was really interesting how you said the coating won’t burn. Do you think places like McDonalds use a similar coating on their chicken nuggets, so they keep a nice pale colour even when they’ve been fried a long time to get that fully cooked texture? When I make nuggets at home they are too dark, so maybe I should use custard powder and potato starch?

I remember seeing a Ken Hom video must be 30 years ago where he made lemon chicken and he used custard powder. Blew my young mind, then I realised that custard powder is nothing more than flavoured corn flower. If I remember correctly Ken Hom used the custard powder when making the sauce, not for making a batter. In fact, I don't think he breaded/battered the chicken.

We've never used custard powder to thicken, since the 50s we've and everyone else we know has always use potato starch, the reason custard powder is used is that it gives it sweetness without sugar so it doesn't burn, colour as with out starch doesn't really brown and for the batter to have a richer flavour, one that I'd never put into a sauce, but if it works for you brilliant :)

@@ZiangsFoodWorkshop It was just a happy memory that popped into this old head. Like I say, I don't think Ken even coated the chicken. When I used to make it for friends it was basically stir fried chicken breast in a sauce made from custard, sugar and lemon. I would have been about 17. I'd probably gag on that now. I've only very recently discovered your channel and I like it very much. Anything I ever comment will never be a dig, or negative. I love cooking and can see that you and your lovely mum do too. It's a pleasure to watch and a I'm always learning.

It colours the batter and adds a sweetness that doest burn, if you added sugar the batter would burn before the chicken was cooked

I love the balance in sweet and sour recipes like these, there is no real weight or measure depending on how much you're making you have to add the sugar and taste, add the lemon or vinegar and taste, I do a very similar one to this using orange, and I even heard of someone using jam, once you get the starch for thickening and the balance of sweet and sour then add garlic or peppers/chilli etc it really comes together, I just don't make these very often as they are quite fatty and bad for teeth ;) If you get this from a takeaway the batter is usually dark dark brown from over used oil with nasty kinda processed hard chicken inside that shoots out from the batter when you bit it uuuuugh :/

I bought some of the 'added water' chicken from Morrisons. Not sure how to cook it though because it comes frozen and says don't reheat on the back of the pack.

I would think the don't reheat applies once it's been cooked, so basically cook it and use it immediately

I've only ever used custard powder to make custard! I stopped buying it when i realised it was almost entirely cornflour with a bit of vanilla flavouring and some yellow colouring. Does using custard powder give better results than using cornflour??? Your thought on this would be appreciated.

It colours the batter and adds a sweetness that doest burn, if you added sugar the batter would burn before the chicken was cooked

By me the takeaways use chicken breast pieces rather than the large single pieces in the video. If I was to use cubed breast would you recommend the use of an egg in the batter since the chicken would be bite size and not need cutting or would you still leave it out? Either way this is on this weeks menu. 😋 (I just probably set myself up for a Chin rant!) 😱
