Dragon flour isn't sold in Australia, it occasionally pops up on eBay but expensive and could of been sitting around for months. I now use SR flour seasoning, with Mary Mack's instant batter mix to coat (sold here in all supermarkets). Also good for fish & chips. I use frozen Basa, thaw, lightly salt & sit for 2hrs in fridge to draw out moisture for stay crunchy batter.

Peppered MSG flavoured chicken? You did not put any sesame oil with the batter! The most essential ingredient that any good decent cook would use in Chinese cooking. Where did you have your takeaway shop?

Sesame oil conflicts with sweet and sour sauce, after working as a chef is over 20 I’ve never seen any one out sesame oil in to in-rich batter for chicken balls 😂 if they did it would show a complete lack of understanding of flavour and just using it because it’s “Chinese”
