Another great video J.P. You may want to sell your offset because you clearly love this ivs. A couple of tricks with the ivs that you may have not tried. To get the smoker up to temp quicker, take off the back capped opening as well as keeping the ball valve opened. Also don’t put water until near the ideal temp or it will take forever heating the water instead of the smoker. You are getting me in the smoking mood. Good video! One tip I learned when I first started smoking was the biscuit test. Get the pit up to temp, and place biscuits (store bought cheap) at the front , back, corners, and middle of every grate . You will be able to see which ones cook faster / slower and arrange your cooks by that. I usually do it during the initial seasoning, and then again after about 10 cooks once the smoker has seasoned well and settled in.

Love it Mr. Santos! I have one on order as well as both you and Eric Cantu (Fat E's BBQ) swear by them. I love the consistent temps you were showing and plan to run mine in a similar way. One question about the probes though. I didn't see where the probes went into the smoker. Do you have a probe port on the side or is it run via the door? Any thoughts about future impact on the gasket with 3-4 wires always pressing in on the gasket when the door is closed?

Thanks Bryan, appreciate you commenting and watching. This smoker performs outstanding. I think you can order probe ports with it if you want. I don’t think there will be an issue with the gasket and the probe cables. The gasket is flexible enough and the cables are small enough that I don’t think they will cause any issues. But probe ports would be a. nice feature to get. Thanks again.

Cool video. You should test your offset. Reverse flow smokers are a little bit better at even temperatures that yours but I think yours is more efficient.

Thank JP. Great video. I also have the Large IVS from LSG. When I use the water pan I have a temperature differential of 50°F. Have you seen the same? I also have a problem with the temperature walking up after about 5 hours of cooking. I believe the snake method I use using maybe lit off faster. I tried the U method same thing. I end up having to adjust the top vent to hold the temps in check.

Thanks John, appreciate you watching and commenting. As far as the temperature differential of 50 degrees, I have not seen that on my smoker. What I have seen is that in order to smoke at the lower temps I gotta use water in the water pan. I’m talking down in the low 200 ~ 250’s Adjusting the top vent will restrict the air flow as well allowing to maintain the temps down. I have not tried the U method. Most of my smokes are 10 hours and less so i just use an small 8 lb bag of charcoal mixed in with some chunks of oak. Thanks again.

Yes, it works perfect. No need to wrap. If you wrap it will trap to much moisture and the bark will be mushie. Taste real good though with the added moisture.
