How do these apex tournaments work? As in why does Matsuri and Astel’s teams always land in that same spot each match? Is it in the rules that the teams have to choose a spot beforehand and commit to it or do they do it to practice holding an area down?

drop locations are predetermined with each team being given a specific location to drop. I think they do that so that no one dies early on without getting some loot, it also leads to some intense final circles as some games get to like round 3 with all 20 teams still alive.

Disclaimer: Some of this may be wrong because I only have surface level knowledge from the tournaments I watch. Edit: Apparently drop locations were actually assigned in this tourney so disregard my first and second paragraph. I believe that there’s no specific rule that “assigns” each individual team a drop zone. However, competitive teams usually like to drop in the same POI (place of interest) every game in order to practice their loot pathing and distribution. After all, if you do the same thing every time you’re bound to get faster and better at it. However, it’s important to note that is isn’t any actual formal procedure to it: There are times during scrimmage matches (essentially practice games) where two teams happen to land in the same POI or are a bit too close to each other for comfort (Like Matsuri’s and Astel’s teams here). In these cases, you’ll see something like what happened in this video: Where the “better” team pushes out the other and takes more territory. The reason why Matsuri’s team doesn’t just fight Astel’s is because the point system in Apex tournaments is heavily based off of placement (1st, 2nd, 3rd). No one wants to risk dying in an early fight and would rather go for high placement.

This tournament specifically had team leaders to do a lottery of where they would be landing. Astel's and Matsuri's landmarks are beside eachother, and those two houses are like sandwiched between so it depends on who wants to take them (read: assert dominance)

They have their predetermined landmarks. For this tournament, Shibuharu (the organizer) did a lottery stream to determine which team get which landmark. Matsuri's team got Thermal station, which is directly next to his team's landmark, The tree. The reason for this is Shibuharu deems landmark fight is unnecessary and he wants team to practice their loot pattern and rotation rather than fighting for a landmark, which can be RNG at time.

There is also a kill point cap for each round to keep this tournament close and exciting as you cannot kill 1/3 of the lobby and gain a hugh lead early into the tournament. The kill point cap is as follow for each round: 3/6/6/~/~.

for short a scrim is a practice match before a tournament begin, so the players can learn and apply a strats for their game.

Yes, it might be not a rule, it's just they are trying to not doing a blunder, and try to secure a place for them to defend and also attack others. That's why they often hold a position, waiting for a chance, then wipe the enemy. Because later on the final tournament, each kills and standings are counted as points to win the tournament.
