傳統的磅蛋糕的比例是麵粉1:奶油1:蛋1:糖,但口感比較厚實,對於居住在熱帶氣候的人來說,口感會過於厚重。這款磅蛋糕加入了優格,增加蛋糕的濕潤度。香草蛋糕搭配玫瑰花香和覆盆子的酸甜果香,用加入了玫瑰水的粉嫩的糖霜作為裝飾,除了讓外觀吸睛外,更增加了蛋糕風味的層次。
烘焙筆記:
用鮮乳優格,如果用希臘優格需要加水稀釋,不然口味過於厚重。
製作糖霜時,水慢慢加入,避免糖霜過度稀釋,側面就無法有漂亮的水滴下墜感。
奶油和蛋一定要攪拌至完全乳化後再交替的加入麵粉和牛奶。

115g butter
160g sugar
2 eggs
210g all purpose flour
1.5tsp baking powder
1/8tsp salt
80g milk
30g plain yogurt
2tsp rose powder
some red natural food color
2tsp vanilla extract
125g frozen raspberries
2tsp all-purpose flour
1-2drops rose food color
《Rose Glaze》
200g powder sugar
5-6tsp drinking water
1tsp rose water
1-2drops rose food color
1/8tsp rose powder
some candied rose petals
some dried rose petal
some pistachios

烘烤: 170度, 32-35 分鐘
份量:2條細長蛋糕
模具:230*50*65mm x 2
三能SN2132 長型水果條
《磅蛋糕》
115g 奶油
160g 糖
2顆 蛋
210g 中筋麵粉
1.5茶匙 泡打粉
1/8茶匙 鹽
80g 牛奶
30g 鮮奶優格
2茶匙 玫瑰粉
少許 梔子花紅色色粉
2茶匙 香草精
125g 冷凍覆盆子
2茶匙 中筋麵粉
1-2滴 粉紅色食用色素
《玫瑰糖霜》
200g 糖粉
5-6茶匙 開水
2茶匙 玫瑰水
1-2滴 粉紅色食用色素
1/8茶匙 玫瑰粉
適量 糖漬玫瑰花瓣
適量 乾燥玫瑰花瓣
適量 開心果
